How to make Shrimp and Pork Bồn Bồn Salad

  • Prepare Bồn Bồn, Shrimp, and Pork

    First, pick the young parts of the bồn bồn, cut them into small pieces suitable for eating, and wash them thoroughly. Mix a little fresh water with lime juice, then soak the bồn bồn to maintain its beautiful white color.

    Wash the pork with salt, then boil it until cooked, and slice it thinly and long.

    Wash the shrimp, boil them until cooked, then peel the shell, remove the head and tail, keeping only the meat. Next, marinate the shrimp with 1 teaspoon of fish sauce and 1 teaspoon of pepper for about 20 minutes.

    Roast the peanuts until golden and crush them.

    Peel and finely chop the garlic. Remove the outer layers of the lemongrass, wash it, and then slice it into thin rounds.

When buying bamboo shoots, you should choose the young parts that are white and not bruised.

Tips for choosing pork belly

  • Good pork belly has a balanced ratio of fat to meat, so when enjoying it, you will not feel greasy due to too much fat or too dry due to too much lean meat.
  • You should choose meat with a thick outer skin, a layer of fat about 1.5cm – 2cm thick, and the lean meat firmly attached to the fatty part. However, to achieve the best taste in the dish, you should not buy meat with an overly thick skin as it is from pigs that have been raised for a long time, which will not taste good.
  • Pay attention to the color of the pork; good pork belly has dry outer skin, bright red or pink color. The meat after cutting should be bright pink, with white-pink skin that is soft. The layer of fat interspersed with the meat should be bright white and firm.
  • Fresh and delicious meat will have a characteristic smell; when buying pork, you should pay attention; if the meat has a strange smell, it is advisable to avoid buying it.
  • The elasticity of pork belly is very good, so you should check it carefully before buying. Press your hand on the meat; if the dent returns to its original state quickly, then it is good pork.

Tips for selecting good shrimp

  • Fresh shrimp will have transparent legs that are tightly attached to the shrimp body. Do not buy shrimp with discolored, loose legs.
  • Pay attention to buying shrimp with slightly curved bodies, firm flesh, intact shells, and heads firmly attached to the body.
  • Do not buy shrimp with spread-out, loose tails, lost tail fins, and that do not neatly stack together. They may have been caught for a long time or soaked in preservatives.
