How to choose fresh and delicious beef
- Choose small, tender beef cuts with bright red color, small white connective tissue, and bright yellow fat. Avoid large and tough cuts. If you press the beef and it doesn’t stick to your hand and has no foul smell, the beef is good.
- The best is still young beef because it is tender, has white fat, and fine muscle.
- Beef that is pale green or has round white spots between the muscle fibers is infected with worms or parasites. Beef showing signs of dark color, dark yellow fat is old beef, which will be tough, with yellow bones, poor meat elasticity, mushy texture, and slimy surface is beef that is sick, and not delicious. These are types of meat that should not be purchased to ensure safety.
How to prepare Coconut Milk Beef Curry

Prepare the beef
Wash the beef with diluted salt water and then rinse gently with clean water, allowing it to drain. Use paper towels or a clean cloth to dry any remaining moisture on the piece of beef.
Tips for cleaning beef thoroughly, without odor:
- Besides the usual salt soaking method, you can massage the beef with vinegar, alcohol, or lemon, then rinse well with water.
- You can also put the beef in a pot of cold water and then heat it on the stove for about 4 – 5 minutes. This will help the meat firm up, making it easier to slice while also eliminating odors and effectively killing bacteria.
Then proceed to cut the meat into square pieces about 5cm thick.

Prepare the other ingredients
Peel the carrots and potatoes, wash them thoroughly, and cut them into bite-sized pieces.
Minced garlic. Sliced ginger. Smash the lemongrass, then chop it finely. Peel and dice the onion.

Marinate the beef
Marinate the beef with 1/2 tablespoon of salt, 1/2 tablespoon of ground pepper, 1 tablespoon of seasoning powder, 1 tablespoon of fish sauce, and 1 tablespoon of cooking oil. Mix well and let the beef absorb the seasoning for about 20 minutes.
Tip: Marinating the beef with a little cooking oil will help make the beef more tender.

Cooking Beef Curry
Place a pot on the stove, add cooking oil. When the oil is hot, add minced garlic and diced onion, stir well to release the aroma.
Once the onion and garlic are fragrant, add minced lemongrass and sliced ginger, stirring continuously. Next, add 1 packet of curry powder, 1 teaspoon of annatto powder, and 4 curry leaves to the pot. Reduce the heat to medium and sauté for about 3 minutes to let the ingredients release their fragrance.
Then add 100 ml of water. Add diced potatoes and carrots and cook for about 8 minutes.
Add the beef to the pot and cook for another 6 minutes until the beef is cooked and tender.
Add 200 ml of water and 400 ml of coconut milk to the pot and stir well, seasoning with 1.5 teaspoons of salt, 2 tablespoons of sugar, 2 tablespoons of seasoning powder, 2 teaspoons of pepper, and 1/2 teaspoon of seasoning. Cook until the water boils.
Once the broth begins to boil, reduce the heat, cover, and simmer for about 20 minutes until the beef is tender and absorbs the flavors.
If you want the curry broth to be slightly thick, you can mix 2 tablespoons of cornstarch with 100 ml of water and add it to the pot, stirring until you achieve the desired thickness, then turn off the heat.
