  • You should choose intestines that are small in diameter, plump and have a bright pinkish-white color.
  • You can squeeze a piece of intestine; if the liquid inside is milky white and has no fishy smell, then it is good to buy as it is fresh intestine.
  • On the other hand, you should avoid choosing intestines that are pale green, have a large diameter, and the liquid inside is off-white and slightly yellow because those are old intestines, which are very chewy and have a bitter taste, making the porridge not delicious.
  • You can also lightly press on the intestine; if you feel good elasticity, then it is fresh intestine. If it feels a bit slimy, mushy, or rough and has an unpleasant odor, then you should not buy it.

How to choose quality plain rice

  • First, to buy quality plain rice, you should choose rice from well-known brands because the rice from these brands has been quality tested, is safe for health, and is widely trusted by many people.
  • Prioritize choosing rice that has round, uniform, and shiny grains, without being broken, crushed, or having any discolored grains.

How to prepare Intestine Porridge Hotpot

  • Prepare the ingredients

    Rinse 2 bowls of regular rice and soak the rice in filtered water for about 4 – 5 hours, then drain the rice and grind it into small pieces.

    Wash the intestines briefly with water, then rub them with lemon and salt to reduce the fishy smell, and rinse them again with water to clean.

    Next, let the intestines drain, then blanch them in boiling water for about 1 – 2 minutes and immediately transfer them to a bowl of ice-cold water.

    For the accompanying vegetables, depending on the type of vegetable, prepare them, then soak them in salted water for about 15 minutes and rinse them clean with water!

  • Make the sausage

    Add 1/3 of the sliced meat, 500g of finely chopped throat, minced leaf fat, basil, knotweed, chopped green onions, and 100g of crushed roasted peanuts into a bowl and mix well.

    Next, mix 500ml of pig blood with 500ml of filtered water, stir well, and stuff the intestines as shown in the picture.

  • Boil the sausage

    Place a pot on the stove, add about 1.5 liters of filtered water into the pot. Once the water boils, add the sausage to boil and turn the heat down low. Occasionally, remember to poke the sausage to prevent it from bursting.

    The remaining strips of meat and liver should also be boiled for about 20 minutes, then turn off the heat, leave these ingredients in the pot for 10 minutes, then take them out to drain.

    Finally, cut the intestines, sausage, meat strips, and liver into small bite-sized pieces and arrange them on a plate.

  • Cook the pork porridge

    Place a pot on the stove, use the water from boiling the sausage to cook the porridge. Turn the heat down low, add the rice into the pot, and stir well for about 50 – 60 minutes until the porridge expands and becomes soft and mushy, then turn off the heat.

    Scoop the porridge into a hot pot and dip the accompanying dishes into the pot. You can enjoy the pork porridge hot pot with green onions and various herbs as you like.
