How to choose delicious crabs
Female crabs: Female crabs have a square, large abdomen. Looking under the crab, if you see the red roe overflowing, it’s a sign of a tasty, firm crab with plenty of roe.
Male crabs: Male crabs have a small, triangular abdomen.
How to choose tasty, firm crabs:
- Check the claws: You should look at the soft skin (silk skin) on the elbow of the crab’s claw. If this skin is pink-red or dark pink, shiny and straight, it’s a freshly caught crab. Conversely, if the color is pale and the skin is wrinkled, it’s an old crab.
- Squeeze the crab’s abdomen: When you squeeze the crab’s abdomen and it feels firm, it’s a sign of a firm, meaty crab. If this part is soft and flabby, it’s a crab with little meat.
- Squeeze the thigh part of the swimming paddle, below the shell: You should squeeze this part, and if the crab struggles all over the stick, it indicates the crab is still strong and has plenty of meat.
Overall, if you see the crab’s abdomen firm, tightly attached to the crab’s body, the spines on the body and the crab are still sharp, and the legs and claws move rhythmically and flexibly, it means the crab is still fresh, delicious, and meaty.

How to prepare Stir-fried Vermicelli with Crab

Prepare the Crab
For whole crabs, first you need to use a knife, scissors, or any sharp object to stab into the triangular part of the apron to straighten the legs and claws. This step helps you easily clean the crab and prevents the claws and legs from falling off when boiling.
Then rinse the crab under clean running water several times to remove dirt. You can use a brush for easier cleaning.
If you have time, you should marinate the crab with 1/2 teaspoon of salt and 1/3 teaspoon of pepper, then wait about 7 – 10 minutes for the crab to absorb the seasoning before boiling, doing this will help the crab meat taste better.
Place the crab in a pot and pour in water, you should not add too much water, just enough to submerge the crab slightly.
If you didn’t marinate the crab initially, then now add 1/2 teaspoon of salt and a little pepper, and boil for about 5 – 7 minutes until the crab is cooked.
When the crab is cooked, transfer it to a plate, wait for the crab to cool down, then proceed to remove the crab meat. You can tear the crab meat into small pieces for easier preparation of this dish.

Prepare the other ingredients
Soak the wood ear mushrooms in cold water for about 7 – 10 minutes, squeeze out the water, and then cut them into strips. Clean the green onions and cut them into pieces about 3 – 4 cm long.
Peel the onion and cut it into small slices. Peel the shallots and slice them, and crush the garlic. Rinse the chili briefly with water and cut it into small slices.
Peel the carrot, rinse it clean with water, and cut it into slices; you can cut it into flower shapes or round slices. Peel the ginger and slice it.
Blanch the vermicelli in hot water for about 2 – 3 minutes until soft, then remove it and immediately place it in a bowl of cold water to maintain its crispness.
Note: Do not cut the carrot too thick, as cutting it too thick will prevent it from cooking in time with the other ingredients and will become hard.
How to blanch vermicelli without it becoming mushy
- First, you should tear the vermicelli into smaller pieces suitable for serving, as vermicelli is usually packaged in large bundles.
- When blanching the vermicelli, wait for the water to boil vigorously, blanch the vermicelli in the pot for about 2 – 3 minutes, then remove and immediately place the vermicelli into a bowl of cold water (ice water is even better).
- After that, let the vermicelli drain, and mix in 1 teaspoon of cooking oil so that the pieces do not stick together during cooking.

Stir-fried pieces
Place a pan on the stove and add 2 tablespoons of cooking oil, then heat it up. Once the oil is hot, add shallots, scallions, and garlic to sauté until fragrant.
When fragrant, add all the remaining ingredients to the pan including: carrots, onions, ginger, and wood ear mushrooms, and continue to stir-fry for about 7 – 10 more minutes until the ingredients are cooked.
Next, add the crab meat to the pan, season with seasoning, salt, and sugar to taste. Finally, add the vermicelli and continue to stir-fry for another 3 – 5 minutes until the ingredients are well mixed together to complete.
