How to Choose Fresh and Delicious Squid
- You should choose squid that has a shiny color, with a dark brown or milky white body.
- The squid’s eyes must be clear, not bulging, and not leaking fluid, while the head should be firmly attached to the body, with tentacles and suckers indicating fresh squid. If the tentacles fall off and feel soft and mushy, then the squid has been stored for too long.
- When you press the squid’s body with your finger, if you feel it is elastic, firm, and does not dent, it’s fresh squid.

Prepare the Ingredients
Green onions should be trimmed at the root, washed clean, and cut into pieces about 1 finger length. For the onion, peel and wash it, cut it into wedges, and separate the layers. Next, peel 3 cloves of garlic, crush them, and chop finely.
For the squid, remove the head, discard the eyes, teeth, and the ink sac, then peel off the skin, wash thoroughly with diluted salt water, and rinse with clean water, letting it drain. Separate the body and head, then cut them into bite-sized pieces.
Effective Ways to Remove Squid Smell- Mix a little tapioca flour or cornstarch with some water, then knead it with the squid to remove the slime and reduce the smell, then rinse thoroughly with cold water.
- Rub the squid with a mixture of salt, ginger, and white wine or massage it with lemon juice, then rinse with water.
- Marinate the squid with 1 tablespoon of sugar for about 5 – 7 minutes, then rub it on the squid body, and rinse several times with water.
- Blanch the squid in boiling water for a few seconds, then soak it in a bowl of ice water for about 2 – 3 minutes, then take it out and let it drain.
