  • Choose thighs that are of moderate size, not too big or too small, and when touching the meat, it should feel firm and have good elasticity.
  • Avoid choosing chicken thighs that are pale in color, with many bruises, as these chickens may have died before being processed; also, do not choose unusually large thighs as they may have been injected with water to increase weight.

How to prepare Fried Chicken Legs

  • Pre-processing chicken legs

    To thoroughly remove dirt and odor, the chicken legs you bought should be rubbed with salt for about 3 – 5 minutes, then rinsed well with water and drained.

    How to process chicken legs without odor
    • Method 1: You mix a solution of vinegar and salt, then apply it evenly on the chicken or you can soak it for about 3 – 5 minutes and then rinse with clean water to prepare it.
    • Method 2: Soak the chicken in a mixture of lemon and salt for about 5 minutes, rinse clean, and let it drain.

    Use scissors to cut the tendons under the leg, then cut along about 1/2 of the leg, and use your hands to separate the meat from the bone, shaping the chicken meat into a garlic bulb shape as shown in the picture below.

  • Breading the chicken thighs

    Beat 4 eggs into a bowl and whisk until the yolks and whites are combined.

    After the chicken has absorbed the spices, coat the chicken in a layer of flour, then a layer of beaten eggs, and finally a layer of breadcrumbs.

    Tip: To check the oil temperature, dip the end of a chopstick into the pan, if you see bubbles forming, the oil is hot enough to start frying.

    When the oil is hot, gradually add each chicken thigh into the pan, frying on medium to low heat for about 10 – 15 minutes (depending on size) to allow the chicken thighs to cook through and turn golden brown on both sides.
