Glutinous rice 1 kg Coconut milk 200 ml Pandan leaf juice 2 tablespoons Yellow flower juice 2 tablespoons (or fresh turmeric juice) Violet leaf juice 2 tablespoons Gac rice 2 tablespoons White wine 1 tablespoon Sesame salt a little (for dipping) Sugar 3 tablespoons Salt 1/2 teaspoon

How to make Multicolor Sticky Rice

  • Prepare the ingredients

    Rinse the sticky rice 2 – 3 times, then soak it for 6 hours or overnight to allow the rice to expand, then drain the rice.

  • Soak the rice

    To give the rice a beautiful color, mix the gấc rice with 1 tablespoon of white wine.

    Divide the soaked sticky rice into 5 equal parts.

    Soak each part separately with 2 tablespoons of pandan leaf extract, 2 tablespoons of butterfly pea flower extract, 2 tablespoons of gấc rice, and 2 tablespoons of gấc pulp.

    The last part is soaked in cold water to achieve the natural color of the rice, soaking for about 2 hours.

  • Steamed Colorful Sticky Rice

    You put 200ml of coconut milk, 3 tablespoons of sugar, and 1/2 teaspoon of salt into a bowl and mix well.

    After soaking, place the sticky rice in the steamer, separating the colors with parchment paper.

    Put the pot on the stove over medium heat, add 1 liter of water and bring to a boil, place the steamer on top, cover, and steam for 30 – 40 minutes, opening the lid every 10 minutes to wipe the steam off the lid with a dry cloth.

    Next, you open the lid and evenly pour the coconut milk mixture over the sticky rice, fluff it up evenly, and steam for another 1 – 2 minutes until done.

How to Make Colored Sticky Rice with Jackfruit

  • Prepare the jackfruit

    Peel the jackfruit, cut a line along the jackfruit segment to remove the seeds. Avoid making too many cuts in the jackfruit segment as it will be difficult to stuff the sticky rice inside.

    Place the jackfruit in a sealed container or zip bag, and store it in the refrigerator until ready to enjoy.

    Fresh turmeric after being crushed, pour into 1 liter of filtered water, strain to get the yellow water and discard the residue.

    Pandan leaves cut into pieces and put into a pot, add 1 liter of filtered water and simmer on low heat for about 15 minutes. At this time, the water will be dyed purple from the pandan leaves, strain to get the purple liquid, and discard the leaves.

    Pandan leaves cut small, put into a blender and blend thoroughly, pour into 1 liter of filtered water, strain to get the green juice through a sieve, and discard the residue.

    For fresh butterfly pea flowers, wash them clean and put them into boiling water (about 1 liter), simmer on low heat for 10 – 15 minutes.

    For dried butterfly pea flowers, put them into a bowl and pour 800ml of boiling water for 5 – 7 minutes to extract the color.

  • Soak sticky rice

    Wash sticky rice with 2 – 3 times of clean water. Then divide the sticky rice into 5 equal parts (each part 200gr).

    Soak each part of sticky rice separately with different natural coloring liquids, while leaving 1 part of sticky rice to soak in regular cold water.

    Soak sticky rice for about 2 – 3 hours for the rice to absorb beautiful colors. After that, take the sticky rice out, drain the water, and mix all 5 types of sticky rice together.

  • Steam sticky rice

    Pour 500ml of fresh coconut water into a pot, turn on medium heat to boil. Place the sticky rice in a steamer, spread it evenly, and steam for about 30 minutes.

    Tip: Instead of mixing the sticky rice with coconut milk, you can also steam the sticky rice with fresh coconut water. The steamed sticky rice will be sticky and fragrant with a hint of coconut without being mushy.
