How to prepare Beef and Carrot Porridge

Prepare the ingredients
– Clean the carrots and chop them finely.
– Clean the beef and chop it into small pieces. To make it easier to chop, you can put the beef in the freezer for about 30 minutes and then take it out to chop.
– Pour in 1/2 cup of water and mix the beef and carrots together.
– Rinse the rice and then roast it in a pan until fragrant.
– Chop the green onions and coriander finely.
– Chop the shallots, and sauté them until fragrant.

Cook the porridge
– Pour about 700 ml of water into a pot and add the rice to cook the porridge. Simmer the porridge for about 1 hour until it is soft. During cooking, stir the porridge frequently to prevent it from burning.
– When the porridge is almost done, add the chopped carrots and beef and stir well. Season the pot with 1/2 teaspoon of seasoning, 1 teaspoon of fish sauce, and 1 teaspoon of cooking oil. Cook the porridge for another 5 minutes, then turn off the heat.

How to prepare Minced Beef and Pork Bone Porridge

Prepare the bones
– Clean the pork bones, drain, and break the bones before simmering.
– Clean the beef ribs, drain, and cut the bones into bite-sized pieces.
If necessary, you can wash the pork and beef bones with saltwater or blanch them in boiling water before cooking the broth (to clean – recommended if the bones are not fresh).

Cook the broth
– Put the pork bones and beef ribs into a large pot, add about 4 liters of water, then put it on the stove to cook the broth, adding 1 teaspoon of salt.
– When the pot boils, lift the lid and skim off the foam, then cover and continue to cook, frequently lifting the lid to skim off foam to keep the broth clear and sweeter.
Note: When the water boils, reduce the heat and let it simmer for about 2 hours so that the bones gradually release their sweetness. If you simmer the bones on high heat, the broth will evaporate quickly and won’t have the desired sweetness. -
Prepare other ingredients
– Green onions, remove the roots, wash thoroughly with perilla leaves, and drain. Chop the green onions finely, while the perilla leaves should be cut into larger strips.
– Fresh ginger, peel, wash, and cut into thin strips.
– Shallots, peel, chop 2 bulbs finely, and slice the remaining 3 bulbs thinly. Heat a pan with 2 tablespoons of cooking oil, add the sliced shallots and fry until golden, then turn off the heat.
– Mix regular rice and sticky rice together and rinse thoroughly.

Prepare the beef
Wash the beef with water, slice it thinly, then mince it finely. Marinate with a little salt, monosodium glutamate, fish sauce, pepper, and finely chopped shallots, mix well and let it marinate for about 15 – 20 minutes to absorb the spices.

Cooking Beef Porridge
– Once you have the bone broth, strain it through a sieve to get the clearest liquid, discarding the bones.
– Pour the strained broth into a pot (the amount of water should match the amount of porridge you want to cook), add rice and cook until the rice is soft.
– Next, add sliced ginger, season with about 4 tablespoons of fish sauce, 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, and ½ teaspoon of pepper (season a bit lightly because later there will be marinated beef added).
– Boil for a few more minutes, then turn up the heat to bring the porridge to a rolling boil, add all the sautéed beef and stir quickly to cook the meat evenly, then remove from heat.
– Finally, pour the green onion oil from step 3 into the pot and stir well (this adds a fragrant and rich flavor to the porridge).
Note:
- If you like, you can add beef ribs to the porridge because they have a lot of meat, which is very tasty.
- When the porridge is boiling, you must lower the heat and let it simmer.

Finishing and Enjoying
Scoop the porridge into a bowl, add chopped green onions and perilla, and serve hot. You can sprinkle some ground pepper on top.
Note when cooking beef porridge:
– Beef porridge can be creatively varied with fresh beef. Instead of chopping it finely, marinating it, and adding it to the porridge to cook lightly, you can stir-fry the beef with a bit of cooking oil before adding it to the porridge and mixing well.
– If you prefer eating beef in pieces, you don’t need to chop it finely but should cut it into large, thin slices and proceed similarly to minced beef; you can stir-fry it until fragrant or leave it raw to add to the porridge as desired.
– Beef porridge can be cooked with carrots, pumpkin, broccoli, etc., to supplement nutrients for babies or patients.
– Cooking beef with various vegetables is very good; however, if cooked together with eel, it can cause allergies or food poisoning. Therefore, absolutely do not combine these two types of ingredients.
