How to choose delicious, rich lotus seeds:
- You should buy lotus seeds that are still in their shell and separate them. This method may take a little time, but you will have fresh lotus seeds, feeling more secure when using them.
- When buying fresh lotus seeds that have been shelled, choose those that are mature, plump, with an off-white or dark yellow color on the outside. When cooked, these types of lotus seeds will have a distinctive aroma. Especially, these lotus seeds will not be chewy and are very delicious.
How to buy good pork:
- To buy pork for porridge, you should buy the lean pork part, without skin, such as tenderloin or boneless thigh.
- Choose fresh pork that is pink-red in color; do not buy pork that is too white or discolored because that meat may be spoiled.
- Fresh and good pork is firm with high elasticity. If you press your hand into the meat and it springs back, that is good meat; if the meat feels mushy, slimy, and has an unpleasant smell, then it is spoiled meat.
Note: If you do not have time to chop the meat, you can buy minced or ground meat available at the market and supermarkets.
