  • Choose shiitake mushrooms that have a faint pleasant smell.
  • Choose mushrooms that are about the size of a thumb, do not select mushrooms that are too large as they will not taste good.

    After purchasing the carp, clean the scales, remove all internal organs, scrape off the black membrane inside the belly of the fish, and rub it with a little salt and crushed ginger, then rinse well.

    Peeled shallots, take 3 shallots and chop finely. The remaining ginger should be peeled and sliced.

    Peel the carrot and dice it. Clean the shiitake mushrooms and chop them small. Peel the onion and cut into quarters.

    Cut a few slices of ginger into thin strips. Trim the roots of the green onions and coriander, discard any damaged or pest-infested leaves, wash them, and chop finely, keeping the green onion tops.
