Carp 500 gr White rice 50 gr (about 1/2 cup) Sticky rice 25 gr (about 2 tablespoons) Fresh coconut 1 fruit (to extract water) Carrot 1/2 piece Shallots 6 bulbs Ginger 1 piece (small piece) Green onions and coriander a little Cooking oil 2 tablespoons Fish sauce 1 tablespoon Seasoning/ MSG a little

How to make Carp and Carrot Porridge

  • Prepare the ingredients

    Clean the carp by removing the scales, all the internal organs, and scraping off the black skin inside the fish’s belly. Then wash it, using a clean towel or paper towel to absorb all the water, ensuring the fish is completely dry.

    Peel the ginger, then slice it. Peel the carrot and cut it into small cubes.

    Peel the shallots and slice them thinly. Clean the green onions and cilantro by removing any damaged leaves, discarding the roots, and chopping them small.

  • Boil and Separate Fish Meat

    Put about 1 liter of water in a pot, add sliced ginger and the cleaned fish to boil for about 10 minutes until the fish is cooked.

    To make the broth more delicious and sweet, add the water from 1 fresh coconut, then cook for another 5 minutes before turning off the heat.

    Remove the fish and let it cool slightly, then proceed to separate the fish from the bones. Strain the broth through a strainer to prepare for cooking the porridge.

    In a pan, add 2 tablespoons of cooking oil, turn on the heat to heat the oil, then add sliced shallots, frying until fragrant and golden. Next, add all the fish meat, stir-frying evenly over medium heat.

    Wash the rice and glutinous rice clean, drain the water and put it in a pan to roast until fragrant.

    Put a pot on the stove, add 1 liter of water and the roasted rice and glutinous rice, cook for about 20 minutes.

    When the porridge grains have expanded evenly, add the filtered broth and continue to simmer. After cooking for another 10 minutes, add the carrots to cook until tender.
