How to Prepare Ginseng Chicken Soup

  • Prepare the Ingredients

    First, for one chicken you bought, rub some salt over the entire surface of the meat for 3 – 5 minutes, while also removing the internal organs and any remaining blood, then rinse several times with water to ensure it’s clean, and let it drain.

    Fresh ginseng should be placed in a bowl soaked with 500ml of water and a bit of salt for about 30 minutes, using your hands to scrub the surface of the ginseng clean, then rinse directly under running water, and let it drain.

    Glutinous rice should be placed in a bowl and soaked with 500ml of clean water for 1 hour, then rinsed 1 – 2 times with clean water, and let it drain.

    For the lotus seeds, use a toothpick to remove the core, then wash them along with the red dates, and let them drain.

    Green onions should have the roots removed, be washed clean, and drained, then cut into sections using a knife. Finally, peel the onions and garlic, cutting the onion in half lengthwise.

    Next, you gradually add all the sticky rice, lotus seeds, half of the garlic, and half of the green onions into the chicken’s belly.

    After preparing the ingredients, you place a pot on the stove, add 2 liters of water, 1 teaspoon of salt, 1 chicken, all the fresh ginseng, red dates, onions, and the remaining garlic and green onions into the pot, then cook over medium heat for about 15 minutes.

How to clean chicken meat to be fresh and non-fishy

  • Method 1: Add a few crushed ginger slices to a basin of water mixed with 1 tablespoon of salt, soak the chicken completely in the water for about 5 minutes. Rinse with clean water 2 – 3 times.
  • Method 2: Rub lemon slices and a bit of coarse salt over the chicken, then rinse with clean water.
  • Method 3: Rub minced ginger and white rice wine over the chicken for about 15 minutes, then rinse clean.
  • Method 4: Mix vinegar with salt in a 1:2 ratio, rub the mixture onto the chicken and rinse with clean water.
