How to prepare Sweet Vegetable Clam Soup (recipe shared by a user)

  • Prepare the ingredients

    You should choose fresh, young bunches of vegetables with no bruised leaves. After buying the vegetables, cut off the stems and pick out any wilted leaves, then rinse them several times with water. After that, use a knife to chop the vegetables into small, bite-sized pieces.

    For the clams, after purchasing, place them in a large bowl, add a little salt and rice washing water to let the clams expel all the sand, then rinse them thoroughly with water.

    Wash the ginger, peel it, and then crush it with a pestle.

  • Cook the dish

    Place a pot of water on the stove and add the clams, boil until the water is boiling and the clams open. Use chopsticks to remove the clam shells, leaving the clam meat in the pot.

    Then, add the prepared vegetables and ginger into the pot. Season the soup with a bit of MSG and seasoning powder to taste.

  • Look at the eyes of the pineapple; if the eyes are larger and more spaced out, you should buy it, as they usually have a very fragrant smell and are good pineapples.
  • Avoid choosing pineapples that are too long, have black spots on the skin, and feel unevenly soft when touched, as they are spoiled.
  • Choose pineapples that have a uniform yellow color, of moderate size, which may be slightly shorter, as they usually have more flesh than other types.

How to make Clam Soup with Pineapple

  • Preparing the clams

    After buying the clams, soak them in diluted salt water with a few slices of chili for about 1 – 2 hours.

    Then, bring a pot of water with a few slices of ginger to a boil, stirring until you see the clams open. Remove the clams from the boiling water, and let the water settle at the bottom of the pot.

    Separate the clam meat from the shell, then gently strain the clear broth into a separate bowl, keeping it.

    Use the tips of both thumbs to gently push to remove the black innards of the clams, keeping only the white meat.

  • Prepare other ingredients

    Wash the tomatoes and peel the pineapple, removing the eyes and core, then cut into small pieces. Slice the shallots thinly, or chop them finely for better results.

    Cut the green onions at an angle into short pieces about 4 – 5cm long, and finely chop the green onion leaves along with the rice paddy herb.

  • Cook clam soup

    Add a little oil to the pan with chopped shallots and sauté until fragrant. Add the clam meat and stir well. When the clam meat is firm, add the tomatoes and stir evenly, then add 1 tablespoon of salt and stir to absorb the flavor.

    Boil the clam broth that you saved earlier, add the sour fruits and pineapple to cook together. When the sour fruits are soft, remove them to a bowl and mash them with a spoon, then return them to the pot. Add the sautéed tomatoes and clams and continue cooking for about 2 – 3 minutes.

    Add the green onions and rice paddy herb, adjust the seasoning to taste, and then turn off the heat.

    Note:

    • It is advisable to stir-fry over high heat so that the tomatoes retain their shape and attractive red color, but be sure to stir continuously.
    • Only lightly sauté the tomatoes, do not cook them fully, as they will become mushy and lose their color and flavor when boiled.

  • However, do not soak in water with a higher temperature, as clams will be cooked and will not taste good.
  • In the step of stir-frying tomatoes with clams, you can add a little salt to help tomatoes cook faster, saving time.

How to preserve live clams

You can soak clams in diluted salt water with moderate salinity for about 2 – 3 hours, then place them in a slightly humid area; this can help clams live quite long and also be cleaner when used.

You can put the soup in an airtight container and store it in the refrigerator refrigerator, when using, just reheat it, but it should only be kept for about 1 day, do not keep it too long as the soup will no longer taste good.
