How to cook Stewed Pomfret with Ginger

  • Prepare the ingredients

    Peel the ginger, wash it, and slice it into rounds. Remove the outer skin of the shallots and thinly slice them.

    Remove the bile and the red blood part from the pomfret, wash it thoroughly, use a knife to make several cuts on the fish or cut it in half. Marinate the fish with 1/2 teaspoon of salt, and let it sit for about 30 minutes.

  • Pre-fry the fish

    Heat 3 tablespoons of cooking oil in a pan, add the fish to fry briefly.

How to make Ginger and Chili Braised Pomfret

  • Prepare the ingredients

    Remove the bile sac and the red blood from the pomfret, wash it thoroughly, and use a knife to make a few cuts on the fish’s body.

    Marinate the fish with 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of ginger juice, and 1 tablespoon of white wine. Let the fish absorb the seasoning for 20 minutes.

    Cut the chili and spring onion into pieces about 3 cm long. Julienne the ginger.

    Heat the cooking oil, add the marinated fish and fry until both sides are golden.

    Tip: Frying the fish until golden before braising will help the fish meat become firmer, tastier, and prevent it from breaking apart during braising.

    Add 1 cup of boiling water, season with 1 tablespoon of sugar, 2 tablespoons of chili sauce, 1 tablespoon of white wine, and 4 tablespoons of soy sauce.

    Pour the seasoning mixture over the fish multiple times while braising until the sauce thickens and reduces. Then turn off the heat.

Tips for making delicious stewed pomfret

The fish chosen must be fresh, with red flesh, not too soft, clear eyes, no scratches on the body, and no strange smell aside from the fishy scent.

When frying pomfret, do not fry it too long to avoid making the fish fall apart and lose its taste; just fry it until the flesh is firm and the skin turns light yellow.

When simmering, it is best to cook the fish on low heat. Cooking on high heat is one of the reasons that causes the fish pieces to break apart before absorbing the seasoning evenly.
