How to prepare Braised Fish with Green Bananas

  • Prepare the ingredients

    Shallots peeled and sliced thinly. The green onion roots washed clean and crushed.

    Clean the fish, scale it, and cut it into bite-sized pieces. Marinate the fish for 20 minutes with 2 teaspoons of salt and 1/2 teaspoon of ground pepper.

    Peel the green bananas, cut them into pieces, and soak them in a bowl of diluted saltwater for about 30 minutes to keep them white and reduce the sap. After 30 minutes, take the bananas out and rinse them in cold water, then drain.

  • Stew the fish

    Lightly fry the fish: Place a pan on the stove, heat two tablespoons of cooking oil, then add the fish to lightly fry, flipping the fish to ensure both sides are golden. Lightly frying helps the fish to be firmer.

    Take a pot to stew the fish and place it on the stove, add 2 tablespoons of sugar, cook on low heat while stirring continuously until the sugar turns a brown color, then add 3 tablespoons of water and 2 tablespoons of cooking oil. Next, add the shallots and green onion and bring to a boil.

    Take the lightly fried fish and arrange it in the pot, seasoning with 2 tablespoons of fish sauce, 1 tablespoon of sugar, and 2 chili peppers. Bring to a boil, then reduce the heat to simmer for about 20 minutes before adding the green bananas to the pot. If the water reduces too much, add boiling water to cover, and cook for another 15 minutes. At this point, taste and adjust the seasoning of the fish stew.

    Continue cooking until the fish has absorbed most of the water, then turn off the heat.

How to Make Braised Fish with Ginger and Green Bananas

  • Prepare the Ingredients

    Peel the ginger and galangal, then slice thinly. Cut the dried shallots into thin slices.

    Peel the bananas, cut them into bite-sized pieces, and soak them in a bowl of diluted saltwater for about 30 minutes to reduce the sap and keep them white. Then rinse the bananas with cold water and drain.

    Wash the pork belly, cut into bite-sized pieces. Marinate the meat with 1 teaspoon of fish sauce, 1/2 teaspoon of ground pepper, and 1 teaspoon of seasoning powder.

    Clean the fish by removing the guts, scaling it, and rubbing it with salt, then rinse it with clean water and cut into bite-sized pieces.

    Marinate the fish for 30 minutes with 3 teaspoons of seasoning powder, 2 teaspoons of seasoning mix, 2 teaspoons of fish sauce, and 1 teaspoon of ground pepper. Occasionally stir or shake the fish to evenly absorb the spices.

  • Make the Caramel Sauce

    Add 3 – 4 tablespoons of sugar to a pan, turn the heat to low, stir constantly until the sugar turns a brown color, then turn off the heat, add 1 cup of water, and turn the heat back on to boil until the sugar completely dissolves into the water, and it’s done.

    Prepare a pot, layer the bottom with sliced ginger and turmeric, then layer with pork belly, half of the bananas, followed by a layer of fish, and finally the remaining bananas. On top, sprinkle with dried onion and chili.

    Add to the pot: 3 tablespoons of cooking oil, caramel sauce, and boiling water until it just covers the surface. Turn the heat to high until the pot boils, then lower the heat to simmer, braise the fish for about 1 hour for the ingredients to soften, absorb the spices, and the braising sauce to thicken.

    During the braising process, taste and adjust with fish sauce and sugar to your liking.

  • The type of fish used for banana stew depends on your preference; you can use snakehead fish, carp, tilapia,… or various types of sea fish like mackerel, tuna as well. The important thing is to choose fresh fish, ideally just caught.
  • The bananas used for the fish stew should be either green bananas or medium-sized ripe bananas (not too raw and not too ripe); these two types of bananas, when cooked, do not turn mushy and are tastier than other types of bananas.
  • Banana fish stew, like other fish stews, needs to adhere to the marinating time and cooking time so that the fish can absorb the flavors thoroughly.
  • Depending on the region, you can adjust the sweetness, saltiness, and spiciness to your taste.
