How to choose fresh salmon heads

  • You should choose salmon heads with shiny, silver skin, not torn or scratched.
  • The fish meat should be light pink, not slimy when touched, and importantly, when you press your finger into it and pull it out, the fish meat should not stick to your finger.
  • Choose ones with clear eyes, not bulging, sagging, or leaking yellow fluid.

How to prepare Salmon Head Kimchi Soup

  • Prepare the salmon head

    Cut the salmon head in half lengthwise, remove the belly and gills, and scrape off any slime. Then, cut into bite-sized pieces. Rinse thoroughly and let drain.

    Tip: To effectively remove the fishy smell from the salmon head, after removing parts like the gills and belly, cut it into pieces and soak in a diluted saltwater solution made with 3 tablespoons of salt for 1 liter of water for 5 minutes. Then rinse with water and let drain.

  • Prepare the remaining ingredients

    Peel and finely chop 5 cloves of garlic. Remove any bad leaves from the coriander, wash thoroughly with water, then chop finely.

    Cut the kimchi into pieces about the length of a finger.

    Place a pot on the stove, add 2 tablespoons of cooking oil, and adjust the heat to low. Wait for the oil to heat up, then add the minced garlic, stirring constantly until the garlic turns light golden brown and releases a mild aroma, then turn off the heat. Use a ladle to scoop all the fried garlic onto a plate.

  • Marinate the fish

    After the fish has drained, put it into a bowl.

    To marinate the fish, add 1/2 tablespoon of garlic oil, 1 teaspoon of garlic, and 1/2 tablespoon of fish sauce. Stir the fish lightly so that it absorbs the seasoning evenly. Marinate the fish for about 10 minutes.

  • Cook the kimchi soup

    Use the leftover garlic oil from earlier to sauté the garlic. Turn on the stove to heat the oil. Once the oil is hot, add all the kimchi and stir gently for about 1 minute.

    Add 1.3 liters of water and adjust the heat to high. Season with 2.5 tablespoons of sugar, 1.5 tablespoons of seasoning powder, 1.5 tablespoons of fish sauce, 2 tablespoons of kimchi sauce, and 1/2 tablespoon of salt. Mix well to ensure the seasonings are completely dissolved in the soup.

    When the water is boiling, add the salmon head, using a ladle to submerge the fish completely in the soup and cook evenly.

    When the soup boils, adjust the heat to medium and cook for another 3 – 4 minutes. Taste and adjust seasoning to your family’s preference and turn off the heat.
