How to choose fresh and delicious ingredients
How to choose fresh ribs
- You should choose fresh ribs with a light pink color, and when pressed with your hand, they should spring back immediately, without dark or greenish hues and a spoiled smell.
- You should select ribs with flat and small bones as they usually have more meat than other types. However, avoid choosing ribs with very small bones as they come from pigs that are not fully grown, making the ribs not tasty and you cannot ensure that they are from healthy pigs.
- For grilling, choose ribs that are meaty, lean, and have little fat; those with cartilage are the best.
- If buying meat from the market, go early in the morning when the ribs have just been put on the block, providing more options. The external conditions are not as good as other places, making the meat spoil easily and lose its freshness.
How to choose fresh pork
- For whole cuts of pork, first pay attention to the color. The color of good meat is bright pink, neither too red nor too pale. Pork with pale color, a greenish hue, and a foul smell is spoiled, so you should not choose this type of meat.
- Pork that is firm and has good elasticity is considered good meat. You can test this by pressing your finger into the meat; if it springs back immediately, is not slimy, and does not leak water or juices, it’s good.
- You should choose pork with a balance of lean meat and fat to ensure your dish doesn’t turn out dry or overly greasy from too much fat.

Prepare and Marinate the Ribs
You mix warm water with 1 teaspoon of salt, then put the ribs in to wash clean and soak for about 5 minutes, then rinse again with water. After that, you cut the ribs into bite-sized pieces, rinse again with salt water, and let them drain. Alternatively, you can blanch the ribs briefly in boiling water to clean off dirt and eliminate any unpleasant odor.
Marinate the ribs with 1 tablespoon of seasoning, 1/2 tablespoon of sugar, 1/2 tablespoon of salt, 1 teaspoon of pepper, and 1 tablespoon of minced shallots. Mix all the ingredients together and marinate for 15 minutes for the ribs to absorb the spices.

Sautéing and Cooking Ribs
Turn on the pressure cooker in “Sauté” mode with the high temperature setting “More”. Next, add about 1 tablespoon of cooking oil and 1/2 tablespoon of sautéed shallots to the pot.
Tip: Sautéing the ribs first will help render the fat and make the ribs firmer and absorb more seasoning.Next, add all the marinated ribs into the pot, stirring evenly for about 5 – 7 minutes until the meat is firm. Then add about 2.5 liters of warm water into the pot.
Cover the lid, do not close the valve and set the cooking mode to “Soup” with the temperature set to “Normal”. Cook for about 10 minutes, then press the “Cancel” button to turn it off. Open the lid and remove the white foam, while checking if the ribs are cooked; if not, cover the lid again and continue cooking for about 5 more minutes. If the ribs are cooked, add about 70 grams of red beans (washed clean) into the pot.
Finally, cover the pot again, lock the valve, and let it sit for 5 minutes. You do not need to turn on the pot but will use the internal heat of the pot to steam the red beans and ribs.
-
Grinding meat
Put the cleaned pork into the meat grinder, add 1 tablespoon of sugar, 1 tablespoon of fish sauce, and 1 teaspoon of pepper. Close the lid and grind the meat until smooth, remembering to grind it just enough to avoid the meat being too crumbly or too chunky.
-
Cooking porridge
First, mix 80g of sticky rice with 170g of brown rice together. Then wash the rice mixture with water about 2 – 3 times, then drain the water and let it dry.
You open the steam valve and check the rib soup pot to see if the beans are cooked. If not, close the lid, lock the valve, and cook in “Soup” mode at “Normal” temperature for about 10 minutes to soften the beans.
Once all the ingredients are cooked, open the lid and add the rice mixture to the pot, close the lid, and lock the valve. Set the pot to “Porridge” mode at “Normal,” cooking for about 10 – 15 minutes until the porridge is done.
Finally, add the minced meat to the pot, switch to “Sauté” mode, and stir well to separate the minced meat so it doesn’t clump together. In this mode, you do not need to close the lid, just keep stirring and cook for about another 10 minutes, and you can serve the porridge into bowls and enjoy.
-
Final product
The porridge is thick with grains that are cooked just soft enough, adding a bit of the nutty flavor of brown rice mixed with sticky rice. The pork ribs are tender with chewy tendons and paired with red beans that are rich and flavorful.
You can sprinkle some fried shallots, green onions, and pepper on top to enhance the aroma of the porridge and add a bit of chili sauce to balance the sweetness and richness of the porridge with a gentle spiciness.

How to Prepare Chicken Porridge Using a Pressure Cooker
-
Prepare Rice (wash, cook rice hot)
Wash the rice thoroughly, then soak the rice in water for about 1 hour to soften it, which helps it expand faster and absorb the flavors better when cooking.
Add about 0.5 liters of water to the pressure cooker, then add all the washed rice, set the cooker to “Sauté” on “More” to heat the water in the pot first, and skim off the white foam when it boils. You do not need to cover the pot while cooking the porridge in this mode.
Note:- If you do not have time to soak, you can also cook directly, but the cooking time for the porridge to be soft and delicious will be longer than if the rice has been soaked.
- If you like, you can also roast the rice slightly until golden to enhance the aroma and flavor of the porridge.
-
Prepare the chicken
First, you chop the chicken into separate pieces, removing excess skin and leaving only the skin on the wings. Then, wash the chicken with diluted saltwater and rinse it clean with water, and let it drain.
How to clean chicken and remove odor- After rubbing it with salt, you can use a mixture of rice wine and sliced, crushed ginger, and rub and squeeze the entire chicken wing once more to help eliminate any odor and dirt.
- Wash it clean and wait for it to drain. Additionally, you can add lemon to the water and soak the chicken wings for 15 – 20 minutes. Then take it out, rinse with cold water, and let it drain.

Cook porridge
After about 20 minutes of cooking porridge, the water in the pot has started to boil, and the rice has expanded. You add the chicken to the pot of porridge and crush the lemongrass and ginger to cook together.
Season the pot with about 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, and 1 teaspoon of sugar, and stir gently.
Then, you press the “Cancel” button, cover the pot, lock the valve, and switch to “Porridge” mode at “Normal” level and set the timer for about 8 – 10 minutes to cook thoroughly.
Note: As the porridge begins to cook, remember to slowly release the valve so that the steam escapes gradually. Absolutely do not release it all at once because when cooking porridge in a pressure cooker, releasing it all at once will cause steam to splash everywhere. -
Completion
To complete the chicken porridge, you definitely can’t miss the bowl of salt and pepper with lemon to dip the chicken. To make the dipping salt, you need to put 2 teaspoons of salt, 1 teaspoon of pepper, 1/2 teaspoon of sugar, 1/2 teaspoon of ground chili, and squeeze a little lemon juice into the bowl, then stir well.
After the pressure cooker has released all the steam and the white button has been lowered, you open the lid of the pot and stir gently. You can add more seasoning according to your taste.
Transfer the chicken to a bowl and scoop the porridge into bowls. Tear the chicken into small pieces and finely chop the green onion, then add them to the porridge, sprinkle a little pepper on top for fragrance, and enjoy right away.
