  • You should choose bok choy that has bright green color, smooth and glossy leaves, with no dark spots, rot, wilting, or yellowing leaves.
  • Additionally, fresh bok choy will have stems that are light green or white, not rotten, and without black or yellow spots. When you lift it, it should feel heavy and proportionate to the size of the bok choy.
  • Avoid purchasing large bok choy that feels light, as these are often old and have been sitting for a long time.

How to make Eel Porridge with Bok Choy

  • Prepare the ingredients

    To remove all the slime and fishy smell from the eel, soak it in rice water for about 10 minutes until you feel the slime has reduced. Then proceed to gut the eel, removing all the internal organs and rinsing it clean with saltwater.

    Peel the shallots, wash them clean, and slice them.

    Remove any wilted or damaged leaves from the bok choy, then use a knife to cut it into small pieces about 1/2 finger width, and soak them in diluted saltwater for about 2 minutes to clean off any dirt and rinse again with water.
