How to make Corn Pudding using a rice cooker

  • Prepare the corn

    Peel the corn and remove the corn silk, then use a knife to separate the corn kernels, leaving the core of the corn.

  • Boil the corn core

    Add 1 liter of water, the corn core, and 3 pandan leaves into the rice cooker.

    Cover the rice cooker and boil to extract the sweet water from the corn core, then remove the corn core from the pot.

  • Cook the pudding

    Add the corn kernels to the pot of water along with 120g of sugar, 1/2 teaspoon of salt, stir until the sugar dissolves, then cover and boil for about 20 minutes until the corn is tender.

    Dissolve 1 tablespoon of cornstarch in 1 tablespoon of water in a bowl, then add it to the cooked corn pudding, stirring while adding to thicken the pudding.

    Finally, remove the pandan leaves and your corn pudding is ready!

    Tip: If you prefer a thicker corn pudding, you can add 1 tablespoon of tapioca flour mixed with 1 tablespoon of cornstarch and then add it to the pudding pot!

  • To create a fragrant, chewy texture for the dessert, you should choose the yellow flower sticky rice – a type of sticky rice with plump, round, shiny grains that are uniform.
  • When selecting sticky rice, you need to pay attention that good sticky rice will have full, round yellow grains, with a slightly opaque white color. Especially, there should be no black spots or yellow stains on the sticky rice grains.
  • Fresh sticky rice will have a mild, slightly sweet aroma that is very distinctive.
  • Avoid choosing sticky rice that is white like flour, as it is likely old sticky rice that has been polished or sticky rice that has been polished, losing its nutrients.

    Place the rinsed sticky rice into the rice cooker, then add 300ml of water, 20ml of coconut milk, steamed corn, and 1/2 teaspoon of salt, stirring to mix the ingredients together.

    Next, cover the rice cooker lid and press the cook button for about 25 – 30 minutes until the sticky rice is cooked.

    Once the sticky rice is cooked, add 120g of sugar and mix well until the sugar is completely dissolved.

    Add 380ml of coconut milk, 1 teaspoon of tapioca flour, 20g of sugar, and 1/3 teaspoon of salt into a pot, use a spoon to mix the mixture until smooth and add 3 drops of pandan leaf essence, stir well.

    Then, place the pot of coconut milk on the stove, turn on the heat to low, while cooking, stir until the coconut milk comes to a boil and thickens!
