Ocean fish 1/2 fish (large type) Sour bamboo shoots 50 gr Okra 50 gr Tomatoes 3 pieces Pineapple 1/2 piece Spring onions 3 stalks Shallots 4 bulbs Fish sauce 2 teaspoons Chili powder 1 teaspoon Cooking oil 1 tablespoon Annatto oil 1 teaspoon Common seasoning a little (Salt/ seasoning powder/ ground pepper)

How to Prepare Sea Fish for Sour Soup

  • Marinate the fish

    Cut 1/2 a sea fish into pieces after bringing it home, wash it with clean water, and place it in a bowl.

    Add to the bowl 2 spoons of fish sauce, 1 spoon of salt, 2 spoons of ground pepper, 1 spoon of chili powder, 2 spoons of seasoning powder, and 2 minced shallots. Mix well and marinate for about 15 minutes for the fish to absorb the seasoning.

  • Prepare other ingredients

    Pineapple, cut diagonally into thin slices about 1/3 of a finger joint thick.

    Okra, wash clean, cut off the head, then depending on the length of the pods, cut into 2 – 3 sections, each about 5cm long.

    Tomatoes, wash clean, remove the stem, then cut into wedges of 6 pieces.

    4 shallots, peel and chop finely.

    For scallions, cut off the roots, wash clean, and chop finely.

    Tip: You should buy pineapples that have been peeled and the eyes removed to save preparation time.

  • Cook the soup

    You put a pot on the stove, then add 1 tablespoon of cooking oil. When the oil is hot, add 2 minced shallots and sauté until fragrant.

    Next, add the marinated sea bream to the pot, add 1 teaspoon of color oil and simmer on low heat for about 3 – 5 minutes until the fish is slightly firm.

    Then, pour water into the pot until the fish is submerged, adjust to medium heat and cover the lid. When the water boils, add the prepared pineapple, tomatoes, and okra to the pot to cook together.

    Continue to season with 1 teaspoon of salt and add 50g of sour bamboo shoots, continue to boil until the soup pot boils again, then turn off the heat and add 1 teaspoon of seasoning powder and finely chopped green onions.

    Finally, taste and adjust the seasoning to your liking, then ladle it into a bowl and enjoy right away.

    To clean and eliminate the fishy smell of the giant snakehead fish, use a knife and scissors to remove all fins, internal organs, and blood vessels attached along the fish’s backbone. Then, rub the fish evenly with salt for about 15 minutes and rinse with water several times.

    Add 8 tablespoons of cooking oil to a pan; when the oil is hot, add the giant snakehead fish and fry over medium heat until the fish is cooked evenly. To ensure the fish is crispy on the outside and cooked inside without burning, be sure to flip the fish every 3 minutes.

    Once the fish is cooked, remove it and let it drain the oil.

    Once the tomatoes are stir-fried, add 1 liter of water to the pot, cook over high heat until the water boils vigorously.

    When the water boils, add the snakehead fish, cook over medium heat until the water boils again. Next, put the tamarind into a strainer, place it directly into the soup pot and use a spoon to stir the tamarind, extracting all the clear tamarind juice.
