  • Prepare the Ingredients

    Pick the bottle gourd from the stem to the tip, removing all the large leaves from the stem; crush them once and then strip the fibers while breaking them into pieces suitable for eating until finished.

    After picking, rinse the bottle gourd and soak it in diluted salt water for about 10 minutes, then take it out and rinse again with clean water.

  • Prepare and Marinate the Beef

    To eliminate the fishy smell, soak the beef in diluted salt water for about 5 minutes, then remove it, rinse it with clean water, and slice it into thin, bite-sized pieces.

    Add the sliced beef, minced garlic, 2 tablespoons of soy sauce, and 1/3 teaspoon of seasoning powder into a bowl, mix well, and marinate for about 30 minutes to let the beef absorb the seasoning evenly.

    • Method 1: Roast a small piece of ginger until cooked, then scrape off the outer skin, pound it finely, rub it evenly around the piece of beef, and rinse it well with water.
    • Method 2: Soak the piece of beef in white wine for about 15 minutes, then rinse it clean under cold water.
    • Method 3: Boil a pot of cold water, then blanch the beef for about 3 minutes, remove it, and rinse it with cold water.

  • You should choose bottle gourd that has a firm stem, many fine hairs, a short tip, short internodes, a long petiole, and leaves with a natural green color.
  • Do not choose bottle gourd that has long tips, a light green color, very long internodes, is very soft and easily bruised, has few leaves and few fine hairs.
  • Additionally, you should not choose bottle gourd that has a thin skin, is waterlogged, and has a long, plump stem as these are bottle gourds that have been sprayed with growth hormones.

How to properly pick bottle gourd

  • Step 1: Use your hands or a knife to peel the fibers around the bottle gourd stem from the bottom to the leaves.
  • Step 2: Break off each piece suitable for eating while pulling out any remaining fibers on the bottle gourd stem. Continue this process up to the leaves.
  • Step 3: Continue using your fingers starting from the stem internodes and leaves, to peel off the fibers from the leaf veins.
