How to make Black Bean Dessert with Agar

  • Wash the black beans

    First, put the black beans into a rice cooker and wash them thoroughly 2 – 3 times with water, making sure to remove any floating beans during the washing process!

    Tip: To soften the beans faster, you can soak them for about 2 hours before cooking if you have the time and don’t need to eat urgently.

  • Cook the black beans

    Add 2 liters of boiling water to the beans and then cook. When the dessert pot boils for about 5 minutes, switch the pot to the keep warm mode.

  • Mix the powder and cook the grass jelly

    Mix 50g of grass jelly powder with 100g of sugar evenly. Next, add the mixture into 800ml of water and stir well until the sugar and grass jelly dissolve completely. Then, let the mixture sit for about 10 minutes.

    Finally, place the grass jelly pot on the stove and cook over medium heat until the mixture begins to thicken, then reduce the heat and continue cooking for about 5 minutes before turning off the stove.

    Note: To prevent the grass jelly from clumping and not setting, remember to stir continuously and evenly during the cooking process!

  • Pour the grass jelly into molds

    After cooking, pour the grass jelly into a mold and let it cool for about 1 – 2 hours for the grass jelly to set.

    After cooking the black beans for 30 minutes, you keep the beans and pour the water into a separate pot.

    Next, add 100g of sugar to the beans and soak for 5 minutes to allow the sugar to evenly absorb into the beans. Then, simmer the pot of beans over low heat for 5 minutes until the sugar completely dissolves. During the cooking process, remember to stir the beans regularly.

How to Make Black Bean Sweet Soup with Grass Jelly and Tapioca Pearls

  • Cook the black beans

    First, put the black beans in a bowl and soak them in water for about 30 minutes to soften the beans. Then wash them thoroughly and place the beans in a pot with 300ml of water and a little salt, cooking over medium heat for about 20 – 30 minutes.

    Cook until the beans are soft enough to eat, then add 50g of rock sugar and stir gently, cooking for another 5 minutes until the sugar is completely dissolved before turning off the heat.

    Tip:
    • To prevent the beans from becoming hard, remember to add the sugar only after the beans are soft!
    • To check if the beans are cooked, use chopsticks to pick one bean out; if it still retains its shape and feels soft when gently squeezed, it’s done.
    • Do not cook for too long to avoid the beans bursting.

  • Making Grass Jelly

    You take pandan leaves and put them in a pot with 600ml of water, then boil for 15 – 20 minutes, after which turn off the heat and let it cool completely.

    After the pandan water has cooled down, you remove the pandan leaves and add the grass jelly powder, stirring well until the powder is completely dissolved, then let the mixture soak for 20 minutes.

    To make the grass jelly more fragrant, before cooking, add 1 tube of banana oil and stir well!

    Next, place the grass jelly pot on the stove and turn on the heat to medium. Stir the grass jelly mixture continuously until it starts to boil gently, then turn off the heat.

    To make the filling for the tapioca pearls, take 50g of diced coconut meat, then place it in a pot with 10g (about 2 teaspoons) of rock sugar and 20ml (about 1.5 tablespoons) of water.

    Put the pot on the stove and caramelize the mixture for about 5 – 7 minutes over low heat, until the sugar starts to thicken and has not changed color, then turn off the heat and let it cool.

    Put 150g of tapioca flour into a bowl, then gradually pour in 80ml of boiling water while stirring continuously to make the flour smooth and not lumpy.

    After mixing until smooth, knead the dough quickly until it becomes a smooth, non-cracking, and not overly wet ball. Then, place the kneaded dough into another bowl and let it rest for about 10 – 15 minutes.

    Next, divide the dough into equal portions. Stuff the caramelized coconut filling inside and roll them into round tapioca pearls.

    Boil 500ml of water until it is really boiling, then drop in the tapioca pearls and boil on high heat for about 15 – 20 minutes, until you see the tapioca pearls float to the surface and gradually turn transparent.     Mix 700ml of warm water with 50g of rock sugar and stir well until the sugar is completely dissolved.
