How to cook Marbled Eggs (Tea Eggs)

  • Boil the eggs

    Boil a pot of water, add the chicken eggs and boil for 10 – 12 minutes.

    Tip: If you want soft-boiled eggs, boil for 5 – 7 minutes!

  • Cook the tea mixture

    Place a new pot on the stove, add 2 star anise, 1g of cinnamon, and 0.5g of Sichuan pepper, then roast fragrant on medium heat.

    When the mixture becomes aromatic, add 500ml of water and 2 tea bags, then bring to a boil.

    When the water boils, add 10ml of dark soy sauce, 20ml of soy sauce, about 1.5 teaspoons of salt, and 2 teaspoons of sugar. Stir the mixture well, cover the pot, and boil for 15 minutes.

    Finally, turn off the heat, cover the pot tightly, and let it sit for another 15 minutes to finish.

  • Soak the eggs

    Use a small spoon to gently tap around the eggshell to create cracks.

    Place the eggs in a plastic container, pour the tea mixture over them, and cover tightly. Then, put the container in the refrigerator and soak for at least 12 to 24 hours for the eggs to absorb the flavors and develop patterns.
