How to make pandan caramel flan

Prepare the pandan flan mixture
Use a whisk to beat 4 egg yolks with 6 whole eggs and 145g of sugar. Then slowly pour in 100ml of pandan juice and 300ml of whipping cream, 700ml of unsweetened milk, and 1 teaspoon of pandan extract into the egg mixture and stir well.
Strain the mixture through a sieve and let it rest for 30 minutes.

Make the caramel
Place a pan on the stove, add 210g of sugar, a little water, and 1 teaspoon of lemon juice.
Stir on low heat until the sugar completely dissolves. When the sugar starts to boil, shake the pan until the mixture turns a brown color and then turn off the heat.
Then pour the caramel mixture into the molds.

Steaming flan cake
Pour the pandan flan mixture into each cake mold and cover tightly with a lid or aluminum foil.
Steam the cake for 25 minutes over medium heat, then let it cool for at least 4 hours before serving.

Make the mint flan mixture
Beat 5 chicken eggs, then add 75g of sugar and stir well. Gradually pour the milk mixture through a strainer into the egg mixture and stir well.
Heat 350ml of unsweetened fresh milk, 150ml of fresh cream, and 30ml of mint syrup. Then pour the milk mixture into the egg mixture, stir well, and strain. Chill for 30 minutes.

Make the caramel
Put a mixture of 150g of sugar and 2 tablespoons of water on the stove, then boil over medium heat without stirring.
When the caramel turns brown, turn off the heat and add 1 tablespoon of lemon juice. Once the caramel is done, quickly pour a thin layer into each flan mold.

Pour the mixture into each cake mold, cover tightly with a lid or aluminum foil.
