How to Make Cheese Coated Chicken

  • Prepare the Chicken

    After purchasing the chicken breast, rub salt over the surface of the meat, then rinse thoroughly with water. Cut the chicken into small square pieces about 4 – 5 cm thick.

    Marinate the chicken breast with 1 teaspoon of salt, 1/2 teaspoon of ground pepper, mix well and let it marinate for about 15 minutes.

  • Coating the batter

    To prepare the batter for the chicken, add 100g of flour, 10g of custard powder, and 100ml of water into a bowl. Use a whisk to mix thoroughly until you obtain a smooth, thick batter that sticks and can be pulled into threads.

    Dip the chicken breast into the batter mixture, ensuring the batter coats the chicken evenly.

    After removing the chicken, continue to roll it in a layer of dry batter for a crispy fry.

    Place a pan on the stove, add oil to the pan, and once the oil is hot, drop in the pieces of chicken to fry until golden on all sides.

How to Make Pearl Chicken Shake

  • Prepare and Marinate Chicken

    After purchasing the chicken breast, use salt to rub the surface of the meat, then rinse it clean with water. Cut the chicken into long pieces, about 4cm thick.

    Marinate the chicken with 1 teaspoon of salt and 1/2 teaspoon of ground pepper. Mix well and let the chicken absorb the seasoning for about 30 minutes.

  • Making the sauce

    Place a pan on the stove, add 10g of unsalted butter and let it melt. Once the butter has completely melted, add 20g of minced garlic and sauté until fragrant.

    Next, add 20g of oyster sauce, 30g of soy sauce, and 30g of honey into the pan, stir well and cook until the mixture boils.

    Dissolve 5g of cornstarch in 20ml of water, stir well, and then add it to the pan. Continue to stir until the sauce boils and thickens slightly, then turn off the heat.

How to choose fresh and delicious chicken breast

  • To prepare a delicious dish, you should choose chicken breast pieces with white skin, as these are from larger chickens which have tastier and firmer meat, while younger chickens tend to have more mushy meat.
  • If you buy skinless chicken breast, observe the layer of fat on the chicken. You should choose the fatty part that is white as it will make the meat taste better.
  • Choose a breast piece that has fewer muscle striations. The more striations there are, the less fat and protein it contains; moreover, these striations will make the chicken harder to absorb seasoning and sauces during cooking.

How to clean chicken breast properly, without any fishy smell

  • The chicken breast you bought should have its skin removed, washed with water, and then rubbed evenly with salt before rinsing with clean water to eliminate any fishy odor.
  • After rubbing with salt, you can use a mixture of alcohol and sliced, crushed ginger to rub and massage the entire breast again, which helps to thoroughly remove any unpleasant smell and dirt.
  • Additionally, you can also add lemon juice to water and soak the chicken breast for 15 – 20 minutes. After that, take it out, rinse with cold water, and let it drain.
