Prepare the ingredients
Wash the chicken wings thoroughly, then use a spoon to poke the chicken wings to allow the marinade to absorb better.
Put the chicken in a bowl with 1 crushed ginger root, 1 tablespoon of white wine, 1 tablespoon of salt, and pour boiling water in to soak for 10 minutes to help clean, firm up the chicken meat, and enhance the aroma of the dish.
Remove the chicken to drain, then add 1/2 teaspoon of seasoning, 1/2 teaspoon of MSG, minced garlic and onion, a little cooking oil, and mix well by hand and marinate for about 15 minutes.
Tip: Marinating the chicken wings with white wine, ginger, and boiling water helps the chicken meat to be tender, not dry, has a strong aroma, and keeps the wings cleaner. -
Make the sauce
In a bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, 1.5 tablespoons of honey, 2 tablespoons of chili sauce, 1 tablespoon of cooking oil, and 2 tablespoons of water, along with 1/3 teaspoon of MSG and 1/3 teaspoon of seasoning, and mix well.

Add oil to the pan and wait for it to heat up, then add the chicken wings to fry in deep oil over medium heat.
Tip:- When frying, you can add a little salt or a few chili peppers to the oil to prevent it from splattering.
- You should not fry the chicken wings until crispy; just fry them until golden to avoid the chicken meat becoming dry and unappetizing.
Wait until they are evenly golden. Then take the chicken out to drain the oil.
Add minced garlic to sauté until golden. Then add minced chili to stir-fry together, depending on your taste, you can adjust the amount of chili.
Add butter to the pan to melt evenly over low heat, then add in the remaining garlic. Add the sauce and mix well until you see bubbles rising, then add the chicken. Stir well so that the chicken wings mix evenly with the seasoning over low heat.

Put tamarind in a bowl with a little hot water, use a spoon to mash. Then strain the tamarind water through a sieve.
Tip: You can also use fresh tamarind, add about 1 bowl of water to a pot and bring it to a boil, add the tamarind and cook until soft, then mash it. Still strain the water through a sieve.Take the tamarind water from before and mix it with chili sauce to taste, 2 tablespoons of sugar, pepper, and a little monosodium glutamate, stirring until dissolved.
Wash the chicken wings with salt water, cut them up. Soak in hot water to clean further. Then rinse the chicken wings with water.
