How to make Traditional Rice Flour Fried Banana Cake

Mix the batter
You use a large bowl to mix the all-purpose flour and rice flour together. Gradually pour clean water into the flour bowl, stirring continuously until you have a thick batter mixture.
Next, add 1/2 teaspoon of salt, 1 tablespoon of sugar, and 2 tubes of vanilla into the batter mixture and stir well. Then, let it rest in a cool place for 30 minutes. While waiting, you can prepare the bananas.

Prepare the bananas
Peel the Saba bananas, cut large ones in half, and leave the small ones whole, then place the bananas in a clean plastic bag. Use a knife or a rolling pin to gently press the bananas until they are slightly flattened. Do not press too hard, or the bananas will become mushy and can’t be fried.

Fry the cake
You place a deep-frying pan on the stove, heat the pan and then add cooking oil so that when frying, the oil covers the banana pieces.
Heat the cooking oil and then pick up a banana piece, dip it into the batter so that the batter coats evenly on the outside of the banana piece. You lift the banana piece high, wait a moment for the excess batter to fall back into the bowl before placing it into the frying pan.
Fry the cake over low heat until you see the cake turn golden, then remove the cake to a plate lined with absorbent paper; the cake will absorb the excess oil and be crispier for longer, making it less greasy to eat.

Finished product
After you finish frying all the bananas and the cakes have absorbed some oil, take the cakes out onto a plate and you can enjoy them now. The cakes taste best when they are still hot!

How to Make Thai-style Crispy Fried Bananas

Mixing the batter
Gradually add the following ingredients into a bowl: rice flour, baking powder, white sesame, sugar, grated coconut, salt, coconut milk, and water. Mix all the ingredients well until combined.

Cut bananas and dip in batter
Peel the ripe bananas, then use a knife to cut them lengthwise into thin slices about 1cm thick. Next, add all the banana slices into the batter bowl and gently mix to coat the banana pieces evenly.

Fry the cake
Place a pan on the stove, pour oil so that when frying, the oil covers the banana pieces. Heat the oil until hot, then lower the heat, and start adding the banana pieces to fry.
Fry the banana until the outer batter puffs up and turns golden brown, then take the cake out and place it in a basket lined with absorbent paper.

Wait for the cake to cool down a bit and drain the oil, then take the cake out onto a plate. Thai-style banana cake is best enjoyed with a bit of honey for extra flavor!
