  • Prepare the bananas

    Peel the bananas and immediately soak them in a basin of water mixed with half a lime and 1 tablespoon of salt for 10 minutes to reduce the sap and maintain their white color.

    Then, take the bananas out and dry them, then slice them into pieces that are neither too thick nor too thin.

    Heat 100 ml of oil in a pan, and once the oil is hot, add the bananas and short pandan leaves to fry together.

    Gently stir until the bananas are golden and crispy, then take them out onto a plate lined with paper to absorb excess oil.

    Add 100g of sugar and 70 ml of water to a pan and boil over low heat for about 3 minutes until the sugar dissolves.

Green Siam bananas 600 gr Sugar 120 gr Green onions 4 branches Salt 1 tablespoon Cooking oil 500 ml Lemon juice 100 ml

How to prepare Thai-style green bananas with sugar

  • Prepare the ingredients

    Prepare a basin of clean water, add about 1 tablespoon of salt and the lemon juice you have prepared. Stir well until the salt dissolves.

    Cut off both ends of the green bananas, then cut them into 4 equal parts lengthwise. Soak them in the prepared basin of water for about 15 – 20 minutes. This method helps remove all the sap from the bananas, prevents them from turning black, and makes peeling easier.

    Next, proceed to peel off the green outer skin of the bananas. Rinse them clean once more and place them in a colander to drain.

    Wash the green onions and chop them finely.

  • Fried Banana

    Pour cooking oil into the pan and heat it up. When the oil is hot, add the bananas to the pan and fry on high heat until the bananas are slightly firm.

    Remove the fried bananas to a bowl or plate lined with paper towels for about 3 – 4 minutes to drain well before coating with sugar.

    Tip: You should let the bananas drain well before adding them to the frying pan to avoid oil splatter. You should also avoid frying the bananas too golden as it can cause them to break easily and lose their taste.

  • Coating with Sugar

    Add 120g of prepared sugar and 50ml of purified water into the pan, cook over medium heat, and stir regularly until the sugar dissolves.

    When you see a lot of bubbles forming in the sugar mixture, add the fried bananas and chopped green onions to the pan, then continue to cook over medium heat.

    Finally, reduce the heat to low, stir continuously until the sugar mixture dries and coats the bananas with a layer of sugar, completing the dish.

Tips for successfully making sweetened green bananas

  • Use a deep pan or pot with plenty of oil to fry the bananas. When frying, keep the heat on low to medium.
  • Fry small batches of bananas one at a time. Do not fry too many bananas at once, as this will cause uneven cooking—some will burn while others remain soft.
  • When frying, you don’t need to flip them too much or too quickly. Since we’ve added a large amount of oil, and the bananas are sliced thin and added in small batches, the oil will evaporate the moisture from the bananas quickly and make them evenly crispy without needing to flip them excessively.
  • Before frying the bananas, you can fry 2-3 slices of ginger in the oil first and then remove them before adding the bananas. Alternatively, use your fingertips to sprinkle a little salt into the oil while frying the bananas.

Storage method: If you don’t use them all, you can put them in a zip bag, food container, or any other lidded container. Store them in a cool place; if it’s too hot, the sugar will melt, and if it’s too cold, the bananas will become very hard.
