  • Currently, you can buy lion’s mane powder at stores selling baking ingredients or in supermarkets, and reputable e-commerce websites. The price ranges from 12,000 VND – 15,000 VND/100gr (price updated as of June 2021).

How to prepare fried catfish with galangal

  • Prepare catfish

    After buying the catfish, place it in a bowl and pour boiling water over it. Wait until the skin turns white, then take the fish out and use a cloth to rub it under running water to remove the fish’s membrane.

    Next, gut the fish, remove all the internal organs, and wash it clean. Then use a knife to fillet the fish along the body and cut it into small square pieces, each about 1.5 finger lengths long.

    Wash the lemongrass thoroughly, then drain, cut into pieces about the length of one finger, then use a pestle to crush and put into a bowl.

    For the ginger, peel, wash it clean, cut it into small pieces, and put it into a multifunctional blender to puree. After peeling, chop the shallots and garlic finely and put them into a bowl.

  • Marinating fish and coating with flour

    First, add 1 tablespoon of tapioca flour and 1/2 tablespoon of lion flour to a plate, mixing these two types of flour together well.

    Next, add the cut fish along with 1/2 teaspoon of seasoning powder, 1 tablespoon of seasoning granules, 1/2 teaspoon of sugar, 2 teaspoons of satay, 2 teaspoons of annatto oil, 1 teaspoon of sesame oil, and 10 ml of cooking oil into the pan.

    Then, crack the duck egg, take the egg yolk and add it in, followed by squeezing out the juice of chopped shallots, garlic, lemongrass, and galangal. Mix well until the seasonings are dissolved, then add 1/2 tablespoon of the mixed flour and marinate for about 5-10 minutes for the fish to absorb the flavors evenly.

  • Fried Fish and Galangal

    First, pour 800ml of cooking oil into a pan, wait until the oil is hot, then add the marinated fish and fry over medium heat for about 10 minutes until the fish is golden brown, then remove the fish.

    Next, add the drained lemongrass along with a little ground galangal and the mixture of tapioca flour and lion’s flour that you prepared earlier into a plate, mix well so that the lemongrass and galangal are evenly coated with flour, then add to the pan of oil where you just fried the fish.

    Fry over medium heat for about 2 minutes until the lemongrass and galangal are golden and crispy, then remove and drain.

    Then, add the fried fish back into the pan of oil where you just fried the galangal, fry again for another 2 minutes over medium heat until the outer layer of the fish is crispy and delicious, then remove and let it drain.
