Barramundi fillet 300 gr Plum sauce 100 gr Onion 10 gr Garlic 10 gr Lemon juice 20 gr Chili 10 gr Spring onion 10 gr Ginger 10 gr Dill 10 gr Seasoning powder 10 gr Sugar 10 gr Fish sauce 10 gr Chili powder 10 gr Cooking oil 100 ml Tempura flour 100 gr Onion and garlic juice 20 gr Water 100 ml

How to Cook Grilled Barramundi with Tamarind Sauce

  • Prepare and Marinate Barramundi

    Wash the barramundi clean, cut into bite-sized pieces about 1cm. Place the fish in a bowl with 10g of lemon juice, 20g of minced garlic, and mix well, then marinate the fish for 5 minutes.

  • Make Tamarind Sauce

    Dissolve 100g of tamarind sauce in 100ml of water so that the sauce can mix well, making it easier for the sauce to penetrate the fish when cooked.

    Add 10ml of oil to the pan, when the oil is hot, add 10g of minced garlic, 10g of minced shallots and sauté until fragrant. Then, add the tamarind sauce along with 10g of fish sauce, 10g of sugar, 10g of seasoning powder and stir the mixture until it thickens.

    Pour the sauce into a bowl and sprinkle 5g of dry chili powder on top for serving.
