Squid 500 g Orange 2 pieces (or yellow oranges) Baby watercress 100 g Parsley 1 sprig Crispy frying flour 1 kg Mayonnaise 3 tablespoons White wine 1 tablespoon

How to Make Crispy Fried Squid Sticks with Orange Sauce

  • Prepare Ingredients

    After cleaning the squid, use a knife to score a crosshatch on both sides of the squid pieces so that when marinated, the squid will absorb the seasoning better.

    Then cut the squid into stick shapes with a width of about 1 – 2cm to make it easier to eat.

    Place the cut squid into a bowl and marinate with a mixture of 1 tablespoon of white wine + 1 teaspoon of pepper + 1 teaspoon of seasoning powder + 1 tablespoon of crispy flour, mixing everything together and letting the squid rest for about 10 – 15 minutes for the seasoning to penetrate.

    Wash the parsley, remove the larger stems, keeping only the leaves to add fragrance to the dish.

    Next, finely chop the parsley.

    Wash the orange, squeeze to extract the juice and keep about 1 – 2 tablespoons of fresh orange zest.

  • Mix the Batter

    Use the remaining flour to mix with a cup of water, stirring until the mixture has a moderate thickness.

    Add 1 tablespoon of orange juice and 1 teaspoon of finely chopped parsley to the batter, mixing well.

    Tip: Adding orange juice to the batter enhances the flavor of the dish, and parsley will make the outer layer look more appealing.

    Place a pan on the stove, pour in enough oil, and heat it to medium.

    Add about 1 teaspoon of the prepared batter to lightly coat a thin layer on the watercress. When the oil is hot, add the battered watercress and fry for 2 – 3 minutes, then remove and place on paper towels to absorb excess oil.

    Note: Fry the watercress first because the oil is still clean, so frying the vegetables will preserve their green skin and prevent them from absorbing the flavor of the fried squid.

    To make the sauce for the squid, put 3 tablespoons of mayonnaise, 2 tablespoons of fresh orange juice, and 1 tablespoon of fresh orange zest into a bowl, and gently mix the ingredients together to avoid breaking the orange zest. Then transfer the prepared sauce to a small bowl.

How to make Crispy Fried Squid with Calamansi Sauce

  • Prepare the squid

    After cleaning the squid, let it drain, use a dry cloth to wipe the squid to ensure it is really dry so that when frying, the squid will not splatter oil.

    Use a knife to make crisscross cuts on the squid and cut it into bite-sized pieces.

    Wash the calamansi, cut it in half, squeeze to extract the juice, and finely chop the peel.

    To marinate the squid, add about 1 – 2 tablespoons of the finely chopped calamansi peel, add 1 tablespoon of minced shallots, and then mix everything together.
