How to make Crispy Young Corn with Fish Sauce

  • Prepare the young corn

    Buy young corn, peel off the silk, remove the hairs, and cut off the old stems. Separate the lettuce leaves and wash them thoroughly.

    Soak the young corn and lettuce in diluted salt water for about 15 minutes, then rinse with clean water and let it drain.

    Chop the shallots, garlic, and chili finely.

  • Mix the batter

    Put the crispy flour in a bowl and mix it with 150ml of water, using a whisk to stir until you get a smooth batter; then add 1/2 teaspoon of seasoning powder and mix well.

    Tip: Adding seasoning powder to the crispy flour helps the batter become crispier and fluffier after frying.

  • Fry the young corn

    Place a pan on the stove, add 4 tablespoons of cooking oil, and heat it up.

    Dip the young corn into the crispy flour bowl one by one, then drop them into the pan and fry over medium heat until the corn is golden brown on both sides, then take them out and let them drain.

    Put another frying pan on the stove, add 1 tablespoon of cooking oil and wait for it to heat up, then add all the chopped onion, garlic, and chili to fry until fragrant.

    When the ingredients are aromatic, add 2 tablespoons of fish sauce, 1 teaspoon of seasoning powder, 2 teaspoons of sugar to the pan, and stir well until the sauce boils and thickens slightly.

    Next, add the fried young corn into the pan and simmer for another 2 minutes for the corn to absorb the seasoning before turning off the heat.

How to make Fried Baby Corn with Tamarind Sauce

  • Prepare the baby corn

    After buying the baby corn, remove the corn silk, soak it in diluted salt water for about 15 minutes, then rinse it several times with clean water to remove dirt.

    In a bowl, mix 150g of tempura flour, 1/4 teaspoon of pepper, 1/4 teaspoon of salt, 2 eggs, and 250ml of water. Use a whisk to mix well until you achieve a smooth batter.

  • Fry the baby corn

    Dip the baby corn into the tempura batter, ensuring that the batter coats the corn evenly. After taking the corn out, roll it in a layer of additional tempura flour.

    Place a pan on the stove, add 5 tablespoons of cooking oil, and wait for it to heat up. Drop the baby corn into the pan and fry until golden brown on all sides.

    When the corn is golden brown, use a strainer to remove it, and let it cool and drain oil for about 15 minutes.

  • Making tamarind sauce

    Place a pan on the stove, add 1 tablespoon of cooking oil and wait for it to heat. Then add 1 tablespoon of minced shallots, 1 tablespoon of minced garlic and sauté until fragrant.

    After the shallots and garlic are aromatic, add 300ml of tamarind juice to the pan and bring to a boil, then season with 3 tablespoons of sugar, 1/2 tablespoon of salt, and 1 small chopped chili. Stir well until the sauce thickens and becomes slightly sticky, then turn off the heat and pour it into a bowl.

    Tip:

    • If you want the sauce to be thicker, you can dissolve a little cornstarch or tapioca flour in water and add it to the sauce, stirring until you achieve the desired thickness before turning off the heat.
    • Depending on your family’s preference for spiciness, you can adjust the amount of chili added to the sauce!

How to choose delicious young corn

  • Choose young corn with evenly sized kernels, about the size of a finger, because when eaten, it will be crunchier and sweeter than larger ears.
  • Select young corn with a straight stalk, not bent. It should feel firm when held, and produce a “snap” sound when broken.
  • Young corn must be bright yellow or white.
  • Avoid ears of corn that are scarred, have white spots, are infested with pests, or are dried up or rotting.

Tips for using leftover cooking oil

  • After frying, let the oil cool completely, then strain it through a sieve lined with a paper towel about 2 – 3 times to remove all the leftover particles.
  • Store the cooking oil in a glass jar with a tight lid, and keep it in a cool, dry place.
  • Absolutely do not pour leftover oil back into the bottle of oil currently in use.
  • You should only reuse cooking oil about 1 – 2 times; many health experts believe that using oil multiple times can negatively affect health, as some components in cooking oil can degrade at high temperatures.
