Beef intestines 1.5 kg Onion 1 bulb Star anise 3 g Ginger slices 6 slices Shallot 1 bulb Garlic 5 cloves Horn chili 1 piece Dried chili 5 g Baking soda 1 tablespoon Fresh coconut water 1 liter White wine 2 tablespoons Vinegar 130 ml Soy sauce 3 tablespoons Five-spice powder 1 tablespoon Brown sugar 1.5 tablespoons Cooking oil 2 tablespoons Common seasoning a little (salt/MSG/seasoning powder)

How to prepare Five-spice Braised Beef Intestines

  • Prepare beef intestines

    After purchasing the beef intestines, cut off the excess fat, then place the intestines in a basin of water with 2 tablespoons of salt, 100ml of vinegar, and 1 tablespoon of baking soda, kneading thoroughly to clean the intestines and remove any odor. Rinse several times with water to ensure the intestines are clean.

    Tip: To ensure the intestines are clean and odor-free, you can use a knife to scrape the surface of the intestines during the washing process.

    Put 2 liters of water into a pot and add 1 tablespoon of salt, 2 thin slices of ginger, 3 star anise, 1 onion cut into quarters, and 2 tablespoons of white wine, then bring the water to a boil.

    Next, add all the beef intestines and 30ml of vinegar, cooking for 5 minutes to firm them up, then remove and rinse several times with water.
    Cut the beef intestines into small pieces about the size of your palm.

  • Marinate the beef intestines

    Put 2 slices of ginger, 3 cloves of garlic, 1 onion, 1 teaspoon of five-spice powder, 1.5 tablespoons of brown sugar, 3 tablespoons of soy sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 5gr of dried chili, and 1 fresh chili into a blender and blend the mixture.

    Tip: If your family doesn’t have a blender, you can pound the ingredients and then mix in the seasonings!

    Put the beef intestines into a bowl and then add the entire marinade mixture, mix well to coat and marinate for at least 30 minutes!

  • Stir-fry the beef intestines briefly

    Heat a pan over medium heat, and add 2 thin slices of ginger and 2 minced garlic cloves to sauté until fragrant.

    Add the beef intestines to the pan to sear them until fragrant and slightly golden, then turn to the other side and stir-fry briefly for about 5 minutes.

    You put the stir-fried beef intestines into a pressure cooker, then add 1 liter of fresh coconut water, cover the pot tightly, and cook slowly for about 10 minutes until the beef intestines are tender.

    You open the lid and let the water reduce for about 15 minutes, then add about 1/2 teaspoon of seasoning powder and unplug the pressure cooker.

    Tip:

    • If your family doesn’t have a pressure cooker, you can cook with a regular pot, but the braising time will be longer.
    • You can use filtered water, Coca-Cola, or wine to cook this dish.

How to cook Young beef intestines (beef tripe) braised in coconut water

  • Boil the beef tripe

    Clean the beef tripe you bought by rinsing it with a solution of water, salt, and 3 tablespoons of lemon juice to remove the odor, then rinse a few times with water and drain.

    Put 1 liter of coconut water and 250ml of plain water into a pot, add 1/2 teaspoon of salt, and 1/3 teaspoon of MSG and bring to a boil.

    Add the beef tripe to boil, turning it over on both sides until it is just cooked, about 30 minutes, then remove the beef tripe.

    You put the beef tripe in a bowl and add 1/3 teaspoon of salt, 1/3 teaspoon of seasoning powder, 1/3 teaspoon of seasoning granules, 1 tablespoon of brown sugar, 1 tablespoon of fish sauce, and 1 tablespoon of five-spice powder. You wear gloves and mix well so that the spices absorb evenly into the beef tripe and marinate for about 30 minutes.

  • Braised beef tripe

    You add 1/2 liter of fresh coconut water into a bowl, add 1/3 teaspoon of seasoning powder, 1/3 teaspoon of monosodium glutamate, 4 tablespoons of brown sugar, and 4 tablespoons of fish sauce and stir well to dissolve the spices.

    You heat a pan on the stove, add 3 tablespoons of cooking oil and then add 4 minced garlic cloves to sauté until fragrant.

    Next, you add the beef tripe and fry lightly on both sides until golden for about 4 – 5 minutes. Finally, you add the bowl of coconut water mixture to braise on low heat for about 15 minutes, then add 1/2 tablespoon of brown sugar and stir well, continue braising for another 17 minutes, then turn off the heat.

    Tip: To ensure the beef tripe is cooked and absorbs the spices, you should stir the beef tripe frequently!
