How to Make Traditional Coconut Candy
-
Prepare the candy mold
Cut a piece of parchment paper and fit it snugly into a heat-resistant mold (box). Note that you should brush a layer of cooking oil to prevent sticking before placing the paper in!
-
Cook the coconut candy
Add all 800ml of coconut milk, 240g of brown sugar, 140g of malt syrup, and 4g of salt into a pot and place it on medium heat. Remember to stir constantly until the ingredients dissolve completely, then reduce the heat. Make sure to monitor the temperature in the candy pot!
Cook until the thermometer reads 125 degrees Celsius, then turn off the heat and pour the candy into the mold immediately to cool. You can also monitor by eye if you don’t have a thermometer; when the candy thickens, it’s done.
Note: When cooking candy, it’s best to use a thick pot or cast iron pot. Be sure to stir continuously to prevent the candy at the bottom of the pot from burning.

-
Coat the filling with chocolate
Put dark chocolate into a heatproof bowl, place it over a pot containing 500ml of water, and melt it.
