How to choose fresh and delicious oyster mushrooms

  • When choosing oyster mushrooms, you should select those with firm stems, large caps, which can be gray or white (depending on the type you use).
  • In addition, when buying, you should choose mushrooms that grow in clusters, fresh, and with a characteristic mushroom smell. The tips of the mushrooms are slightly concave and there are thin fibrous gills under the caps. These mushrooms are freshly harvested, which will taste better.
  • Do not choose mushrooms that are torn, bruised, or have an unusual odor.

  • Prepare oyster mushrooms and green onions

    After buying oyster mushrooms, you can use a knife to remove the dirty part of the mushroom stems. Then soak the oyster mushrooms in salt water for about 20 minutes, then rinse them 2 more times with clean water, then squeeze them dry and chop the mushrooms finely.

    Wash the green onions and finely chop the green parts. Wash the cilantro and cut it into small pieces.

  • Make the sauce

    First, you mix the cornstarch water by adding 15g of cornstarch and 20ml of water into a bowl, stirring well until the starch is completely dissolved.

    Next, you heat a pan, add 1 tablespoon of cooking oil and minced green onion into the pan, sauté until the onion is fragrant, then add the minced oyster mushrooms, stir-frying on medium heat for 1 minute so that the mushrooms absorb the flavor of the green onion.

    After that, add 1 teaspoon of soy sauce, 400ml of coconut water, 1 teaspoon of dark soy sauce, 1 teaspoon of vegetarian oyster sauce, 1 teaspoon of vegetarian seasoning, 1/2 tablespoon of sugar, 1/4 teaspoon of five-spice powder, 1 tablespoon of annatto oil, and 1 teaspoon of chili sauce.

    Stir well and cook until the sauce boils and all the seasonings have dissolved, then gradually add the previously mixed cornstarch water. While adding, continuously stir to ensure the cornstarch water is cooked properly and does not clump together.

    After adding the cornstarch water, cook for another 4 minutes until our sauce thickens, sprinkle 1/2 teaspoon of pepper and a little chopped coriander on top, stir well, and adjust the seasoning to taste, and it’s done.

    Stir well until all the spices dissolve, then add 2 tablespoons of cornstarch water, slowly adding while stirring continuously until the cornstarch water completely dissolves into the sauce, then stop.

    Cook over medium heat for another 4 minutes until the sauce thickens, then just scoop it into a bowl and enjoy with bread!
