How to Make Sugar-coated Apricot Jam

  • Prepare the Apricots

    First, prepare 500ml of cold water in a bowl, add 1 teaspoon of salt, and stir until the salt dissolves. Use a knife to cut 500g of apricots in half and place them in the salted water to soak for 15 minutes, then remove and let them drain.

  • Marinate and Soak the Apricots

    After the apricots have drained, place them in a bowl, add 250g of brown sugar, and mix well so that the sugar coats each piece of apricot, then let them soak for 4 – 5 hours.

  • Cook the Apricots

    Remove the soaked apricots, place a pan on the stove, add the soaking water from the apricots and 2 teaspoons of lemon juice, and bring to a boil. Remember to stir constantly with a ladle while cooking to prevent the sugar from clumping at the bottom of the pan.

    Next, add the soaked apricots, add 80g of sliced ginger, stir well, and cook for another 20 – 30 minutes, then turn off the heat.

  • Drying apricots

    Next, you line a baking tray with parchment paper and arrange the cooked apricot pieces on top. Place it in the oven to dry at 125 degrees Celsius for 2 – 3 hours.

    Note: Since the temperature of each oven may vary, make sure to visually check during the drying process to see if the jam is dry enough to avoid overcooking.

    With these simple steps, we have a batch of apricot jam coated with sugar ready. The jam is soft, chewy, with a beautiful shiny brown color.

    The faint aroma of ginger, the tangy sourness of apricots, combined with the gentle sweetness of sugar, all blend together to create a wonderful jam!

    How to Make Apricot Jam Spread on Bread

    • Prepare the Apricots

      After buying the apricots, wash them thoroughly with water. Use a knife to remove the pit and chop the flesh of 1 kg of apricots into a bowl.

      Prepare a large bowl, place 500g of chopped apricots inside, and spread a layer of 500g of granulated sugar on top. Next, pour the remaining 500g of apricots in and cover with another 500g of granulated sugar, then mix well to combine the apricots and sugar.

    • Cook the apricots

      You put the prepared apricots into a pot, place it on the stove over high heat, and use a ladle to stir continuously to prevent the sugar from burning.

      About 5 minutes when the sugar starts to dissolve, you reduce the heat. When the jam boils again, use a ladle to skim off the foam that rises and cook for another 45 – 60 minutes.

      Put a dipping plate for seasoning in the refrigerator for about 15 minutes. To check if the apricot jam is ready, scoop a teaspoon of the jam onto the chilled seasoning plate, tilt the plate to one side; if you see the apricot jam flowing slowly, has a sticky consistency and is thickening, it means the apricot jam is ready. You turn off the heat and wait for the jam to cool down.

      When the apricot jam is completely cool, you put it in a glass jar to use gradually. Now you have delicious apricot jam ready! The jam is thick, sweet, with a mild sourness, perfect for spreading on bread or enjoying with yogurt!

    How to choose delicious apricots

    • To enjoy delicious apricots, you should choose fruits that are evenly sized, not too small or too large. The apricot skin is orange-yellow, covered with a thin layer of white powder, and the apricot is plump and juicy.
    • When ripe, apricots will have a faint, characteristic aroma. Gently squeeze with your hand to feel the firmness; the outside should not be soft or bruised.
    • You should not buy apricots that are too hard, have many black spots on the outer skin, or feel mushy when held.
