Soak the gelatin
First, you put 10g of gelatin sheets into a bowl, add 30ml of cold water and soak for 15 – 20 minutes until the gelatin sheets are soft.

Add 2 egg yolks, 32g of white sugar, and 8g of vanilla sugar (or vanilla powder) into a new bowl, then use a whisk to mix until the sugar is completely dissolved.
Next, add 100ml of unsweetened fresh milk and stir well until the mixture is fully combined.

Cooking the egg milk mixture with gelatin
Put 300ml of filtered water into a pot and place it on the stove to boil, then you place the bowl of the egg milk mixture on top of the pot for steaming, stirring continuously with a whisk for about 10 minutes.
Add the softened gelatin to the egg milk mixture and stir until the gelatin is completely dissolved. Then turn off the heat and remove the bowl of the egg milk mixture with gelatin.
At this point, add 100ml of unsweetened fresh milk and 60ml of whipping cream, gently stirring to combine the mixture.

Soak the gelatin powder
Pour 125ml of filtered water into a small bowl, then add 9gr of gelatin powder, stir well, and set aside for the gelatin to bloom.

Cook the egg milk mixture with gelatin
Add 6 egg yolks, 300ml of sweetened condensed milk, 370ml of unsweetened condensed milk, and 1 teaspoon of vanilla extract into a pot, stir until the mixture is well combined and blended.
Next, add the soaked gelatin to the egg milk mixture and stir well to combine the ingredients.
Then, place a pot on the stove, set to low heat, and cook until the mixture is warm but do not let it boil, then turn off the heat. During cooking, remember to stir continuously to prevent the mixture from burning!
Once the mixture is cooked, strain it through a sieve into a bowl for a smoother mixture.
