Unsweetened fresh milk 200 ml Whipping cream 60 ml Gelatin sheets 10 gr Egg yolks 2 pieces Vanilla sugar 8 gr (or vanilla powder) Granulated sugar 32 gr

What is Whipping Cream? Where to Buy?

  • Whipping cream, often known as fresh cream, is a type of cream made from cow’s milk, in liquid and slightly thick form. When whipped, whipping cream becomes airy, soft, and smooth.
  • Whipping cream does not contain sugar and has a high fat content; because it is made from pure milk, the cream has a sweet, rich flavor, a fragrant aroma, and melts in your mouth.
  • You can easily find whipping cream at supermarkets, convenience stores, baking ingredient shops, or beverage ingredient stores…
  • Alternatively, you can conveniently search for the product and order through e-commerce websites.

How to make Flan Jelly

  • Soak the gelatin

    First, you put 10g of gelatin sheets into a bowl, add 30ml of cold water and soak for 15 – 20 minutes until the gelatin sheets are soft.

  • Mix the egg and milk mixture

    Add 2 egg yolks, 32g of white sugar, and 8g of vanilla sugar (or vanilla powder) into a new bowl, then use a whisk to mix until the sugar is completely dissolved.

    Next, add 100ml of unsweetened fresh milk and stir well until the mixture is fully combined.

  • Cooking the egg milk mixture with gelatin

    Put 300ml of filtered water into a pot and place it on the stove to boil, then you place the bowl of the egg milk mixture on top of the pot for steaming, stirring continuously with a whisk for about 10 minutes.

    Add the softened gelatin to the egg milk mixture and stir until the gelatin is completely dissolved. Then turn off the heat and remove the bowl of the egg milk mixture with gelatin.

    At this point, add 100ml of unsweetened fresh milk and 60ml of whipping cream, gently stirring to combine the mixture.

  • Pouring the jelly and finishing

    Strain the mixed mixture through sieve into the jelly mold, skim off the foam rising to the surface, then wrap it tightly with plastic wrap and put it in the refrigerator refrigerator for 6 – 8 hours until the jelly is completely set.

    Once the jelly has set, take it out and cut it into bite-sized squares, then skewer a piece and enjoy right away!

    So we have also completed the very attractive flan jelly. The jelly is smooth and plump, with a milky off-white color that is extremely pleasing to the eye.

Condensed milk 300 ml Unsweetened condensed milk 370 ml (or cream) Egg yolks 6 Gelatin powder 9 gr Cornstarch 1 tablespoon Vanilla extract 1 teaspoon Granulated sugar 125 gr

What is unsweetened condensed milk? What can it be replaced with?

  • Unsweetened condensed milk is simply known to have a texture similar to sweetened condensed milk; however, it does not contain sugar, making it suitable for dieters or diabetic patients.
  • This type of condensed milk mainly consists of pure fresh milk, which undergoes a heating process to concentrate, losing about 60% of the original water content.
  • You can replace unsweetened condensed milk with cream that has a slightly thick consistency, such as half-and-half cream, light cream, or heavy cream as well!

  • Soak the gelatin powder

    Pour 125ml of filtered water into a small bowl, then add 9gr of gelatin powder, stir well, and set aside for the gelatin to bloom.

  • Cook the egg milk mixture with gelatin

    Add 6 egg yolks, 300ml of sweetened condensed milk, 370ml of unsweetened condensed milk, and 1 teaspoon of vanilla extract into a pot, stir until the mixture is well combined and blended.

    Next, add the soaked gelatin to the egg milk mixture and stir well to combine the ingredients.

    Then, place a pot on the stove, set to low heat, and cook until the mixture is warm but do not let it boil, then turn off the heat. During cooking, remember to stir continuously to prevent the mixture from burning!

    Once the mixture is cooked, strain it through a sieve into a bowl for a smoother mixture.

  • Pudding mold

    Prepare 8 pudding molds, then slowly pour the mixture into the molds, allowing it to cool and slightly set. Use a toothpick to poke holes on the surface of the jelly, then place it in the cool compartment of the refrigerator for 5 hours.

  • Cook caramel jelly

    In a measuring cup, add 125ml of purified water and 1 tablespoon of cornstarch, then stir well.

    Heat a pan on high heat, add 125g of white granulated sugar, and reduce the heat to the lowest setting to melt the sugar. Remember to use a flat whisk to stir evenly so that the sugar melts completely without burning!

    Once the sugar has completely melted and turned a brown color, add 2 tablespoons of purified water, stir well, and wait for the mixture to boil. Then add the mixed cornstarch, continue stirring until dissolved, and wait for the mixture to boil again and thicken slightly before turning off the heat.

  • Completion

    Take the set caramel flan out, and on top of each jelly mold, pour a tablespoon of caramel.

    Make sure to spread the caramel evenly over the surface of the flan jelly, after covering all the jelly molds with caramel, put them back into the refrigerator for another 2 hours.

    After the waiting time, we have the caramel flan jelly ready! The bottom layer is bright yellow egg jelly, and the top layer is a shiny brown caramel that looks extremely appealing.

    The jelly is soft and chewy, and when you scoop a piece into your mouth, you will feel the sweet and creamy flavor, along with the fragrant scent of the caramel layer that is super enticing, with this flavor, it deserves a rating of 10/10!
