Marinate the meat
After cleaning the meat, marinate it with 1 teaspoon of seasoning, 2 full teaspoons of minced shallots, and 1 teaspoon of soy sauce for 10 minutes to absorb the flavors.
Note: According to the original recipe from the Chinese, you do not need to marinate the meat beforehand; marinating the meat will help enhance its flavor.

Prepare the radish
After buying, wash the radish thoroughly, peel it, and then shred it into thin strips.
Once you have shredded it, add a teaspoon of salt to the radish, mix well, and let it sit for about 5 to 10 minutes, then squeeze out the excess water from the radish. This squeezing process will help reduce the strong smell of the radish. After squeezing, do not rinse it with cold water as it will remove the sweetness found in the radish.

Prepare the meat and dried shrimp
After marinating, sear the meat until golden brown on all sides, just enough for the meat to be golden on the outside, no need to cook it through. After that, let the meat cool and then cut it into small cubes.
Note:
Dried shrimp after soaking in hot water for about 10 – 15 minutes should be washed thoroughly and then placed in a frying pan with just enough water to cover them, boiling the dried shrimp for 20 minutes. Once the water evaporates, the dried shrimp will be tender; use chopsticks to stir the dried shrimp evenly before removing them from the heat.

Mixing the batter
Combine rice flour, tapioca flour, and cornstarch in a bowl with 400 ml of water, stir well, and let the batter rest for 30 minutes.
After resting, season the batter with half a tablespoon of salt, half a tablespoon of monosodium glutamate, one tablespoon of sugar, half a teaspoon of sesame oil, one teaspoon of lard or cooking oil, and a little pepper, mixing well.

Cooking the cake
Put about 350 ml of water in a pot, then add the shredded radish along with 2/3 of the dried shrimp and 2/3 of the meat to cook until boiling.
When the radish and ingredients start boiling, gradually add the mixed flour, using a sieve to ensure the flour is smooth.
Use chopsticks to stir the mixture over medium heat until it thickens, then add a little pepper and 1 teaspoon of sesame oil and mix well. Add a tablespoon of chopped green onions and turn off the heat, mixing thoroughly; this will help the dough become drier.
Tip:
- You must always stir the cake; otherwise, it will burn.
- With the original recipe from the Chinese, the meat and shrimp do not need to be cooked but are added directly to the flour, and the radish is not squeezed for water, which gives the cake a distinctive aroma.

Steamed Cake
Prepare a steamer, place the cake in a mold that has been coated with a layer of sesame oil, evenly spread the flour, then add the remaining shrimp and meat on top, cover with a layer of banana leaves, and put it in the steamer for 45 minutes. During the steaming process, you must regularly release steam and add water.
After 45 minutes, use a toothpick to poke in the middle; if the flour sticking to the toothpick has turned transparent, the cake is done.
Once cooked, add some green onions on top for decoration. It’s best to let the cake cool before cutting, as this will make it easier and result in a nicer piece.
