How to choose good pork ribs:
- Fresh ribs will have pink meat, elasticity, and no rotten smell.
- Choose flat pieces with small bones.
- Choose ribs with both lean and fatty meat so that when cooked, the ribs will be tender and not tough.
How to choose good potatoes:
- Do not choose sprouted potatoes to avoid poisoning when eating.
- Select intact potatoes, without scratches.
- Choose potatoes that feel heavy, firm, and have smooth skin.
- Avoid choosing potatoes with wrinkled skin, and that feel slightly soft when squeezed.
- Do not choose potatoes with spots or blemishes, signs of pests, black eyes, or that are rotten or leaking.
How to prepare Canned sardines with tender ribs

Prepare the ingredients
After buying, cut the pork ribs into pieces about 5 to 7 cm long, then wash them thoroughly.
Tip for cleaning pork without a fishy smell:
- After cutting the meat into pieces, rinse it with water, then rub it with salt for about 3 minutes and rinse again with water.
- You can soak the meat in water with the juice of 1 lemon for about 5 minutes and rinse with clean water.
- Using rice vinegar or alcohol to wash the meat will also eliminate the smell of the ribs.
- You can also briefly boil the ribs in boiling water with a few smashed slices of ginger, then rinse with water.
Peel the carrots, wash them thoroughly, and cut them into bite-sized pieces or shape them according to your preference.
Small tip: You can use a vegetable carving tool to shape them into circles.
Potatoes after peeling and washing can be shaped like carrots.
Green onions washed clean, chop the leaves finely, keep the green onion roots.

Marinate the pork ribs
The pork after being prepared will be marinated with 20g minced garlic, 20g minced shallots, ¼ tablespoon of monosodium glutamate, ¼ tablespoon of sugar, ¼ tablespoon of pepper, and half a tablespoon of seasoning powder.
Mix well and then add 1 tablespoon of sardine sauce (the sauce from the sardine can). Mix well for the meat to absorb the seasonings and marinate for 30 minutes.

Sauté the meat
Add 50ml of cooking oil to a pan and heat until the oil is gently bubbling, then add 50gr of red cashews and turn off the heat to stir evenly.
Continue to turn on the heat to low for about 3 minutes to create the color of the cashew oil. Then filter out the cashews, keeping only the cashew oil.
Add 1 tablespoon of cashew oil to the pan, heat it up, and add the ribs to lightly fry until the meat absorbs the color of the cashew oil and firms up.

Add 50ml of cooking oil to the pot, when the oil is hot, add 30gr of minced garlic and 30gr of minced shallots to sauté until fragrant, then add green pepper and stir-fry for 30 seconds, followed by the marinated pork ribs and stir-fry.
Add 500ml of fresh coconut water, cover the pot, and simmer on low heat for 30 minutes.
After 30 minutes, add the prepared carrots, season with 1/4 tablespoon of sugar, ¼ tablespoon of monosodium glutamate, half a tablespoon of seasoning powder, mix well, and cover to simmer on low heat for another 30 minutes.
Add potatoes and cook until they are soft, adjust the seasoning to your family’s taste, add sardines, then add the chopped green onions, and turn off the heat.
Scoop into a bowl, sprinkle with ground pepper, and garnish with finely chopped green onions, chili, and cilantro, then it’s ready to enjoy.
