How to make Dipping Sauce with Fish Sauce

  • Prepare the ingredients

    After purchasing the pineapple, cut off both ends, peel, rinse with clean water, and let it drain.

    Then, cut the pineapple into round slices about 1/2 finger thick. For each slice, continue cutting it into 6 – 8 equal parts.

    Add the pineapple along with 1/2 cup of water (the type of rice bowl) into a blender, blend until smooth, and pour it into a pot.

    For the garlic, cut off the root, peel it, and rinse it with clean water. After buying the chili, wash it clean as well.

    Chop the garlic and chili finely and place them in another bowl.

  • Make the fish sauce

    Add 4 tablespoons of sugar to the pot with pineapple, then place it on the stove and boil until the sugar is completely dissolved.

    Once you see that the mixture in the pot is boiling, pour an entire bottle of fish sauce into the pot, use a ladle to stir well and continue to cook.

    Tip:

    • Be sure to shake the bottle of fish sauce well beforehand so that the meat and ingredients settled at the bottom of the bottle mix in with the fish sauce before pouring it into the pot.
    • During the cooking process, gently skim the foam off the top of the pot to ensure the correct color of the dipping sauce.

    You boil the fish sauce for about 4 – 5 minutes over low heat, then turn off the heat, add minced garlic and chili, and stir well.

How to make Dipping Sauce with Shrimp Paste, Lemongrass, and Lime

  • Prepare the Ingredients

    After buying the pineapple, wash it thoroughly, cut it into small pieces, and put it into a blender to blend until smooth.

    Next, cut the roots of the shallots and garlic, wash them with water, and chop them finely.

    For the lemongrass, cut off the roots, rinse it with clean water, and chop it finely.

    For the chili, wash it, chop it finely, and place it on a plate.

    Heat a non-stick pan on the stove, add 4 tablespoons of cooking oil.

    Once the oil is hot, reduce the heat to low and add the chopped shallots and garlic, stirring evenly.

    When the ingredients turn golden, add the lemongrass to the pan and stir evenly. Once the lemongrass is slightly golden, add the chili to the pan, stirring until the lemongrass is fully golden, then temporarily turn off the heat to remove half of the lemongrass and chili from the pan.

    Next, add 5 tablespoons of shrimp paste, blended pineapple, 3 tablespoons of sugar, and 1 tablespoon of plum sauce to the pan and mix well.

    Turn the stove back on, adjust the heat to low, and cook until the mixture in the pan boils, then cook for another 2 minutes before turning off the heat.

    While cooking, you can taste and adjust the seasoning to suit your and your family’s preferences.
