How to choose fresh and delicious chicken
For live chickens
- The comb should be bright red, and the feathers should be smooth and shiny.
- The anus should be pink and free of any strange fluids.
- The legs should be slender, uniformly yellow, and not wrinkled.
- When lifting the feathers, the skin should be thin and soft; gently squeezing the body of the chicken should feel firm, not flabby, with some large yellow streaks under the breast and wings. Under the wings, the armpits may show meat, and blood vessels indicate that the chicken is firm and not fatty.
- The chicken’s crop should not be hard, indicating a healthy chicken.
For processed chickens
- Choose chicken that looks fresh, with no foul or strange odors, and the skin should not have any bruises or dark spots; avoid choosing blackened chickens as they likely died before processing.
- To avoid buying water-injected chickens, press the suspected areas (mainly the thighs and breasts) to check; if they feel mushy, slippery, or misshapen, do not buy them.
- If you see yellow skin and white internal fat, it is certain that the chicken has been dyed, and you should not buy it.
- If you want to choose good native chicken, select pieces with light yellow skin, thin, smooth, high elasticity, and only dark yellow in some areas such as the breast, wings, and back, with a compact, firm body and narrow breast.
- For frozen chickens in supermarkets, check for reputable sources and expiration dates on the packaging to ensure quality.

How to prepare Five-Spice Braised Chicken

Prepare the chicken
To clean and eliminate the odor of the chicken, remove the internal organs, blood vessels,… wash the chicken with diluted vinegar along with a bit of salt, massage it for about 10 – 15 minutes, then rinse it thoroughly with water.
Then proceed to cut the chicken into small, bite-sized pieces.

Prepare the other ingredients
Wash the ingredients thoroughly, peel and finely chop the shallots and garlic. Peel and julienne the ginger.
Cut the tomatoes into thin round slices to serve with the braised chicken.
Trim the lemongrass by cutting off the roots and tops, then chop it finely.

Stir-frying chicken
Place a pot on the stove, add 1 tablespoon of cooking oil along with minced garlic to sauté until fragrant. Then add the minced lemongrass and stir well, continuing to sauté for about 3 minutes.
When you see the lemongrass and garlic have turned golden, start adding the chopped chicken and stir-fry for about 10 minutes until the meat is firm, then add the shredded ginger and minced shallots.

Stewing chicken
After the chicken meat is firm, add 1 teaspoon of five-spice powder, 1 tablespoon of soy sauce, 1 tablespoon of chili powder, 2 tablespoons of sugar, 1/2 teaspoon of chili flakes, a little pepper, and 1/2 teaspoon of monosodium glutamate, then mix well to let the chicken absorb the flavors.
Reduce the heat and simmer for about 20 minutes, frequently stirring the chicken to ensure it cooks evenly and absorbs the flavors. Then taste and adjust the seasoning as needed before turning off the heat.
Tip
- The amount of chili can be adjusted according to your family’s taste.
- Do not add too much five-spice powder as it will make the dish have a strong and slightly bitter taste, which is not good.
- If the chicken does not release liquid while stewing, you can add a bowl of water (rice bowl) and stew until the liquid becomes syrupy, then turn off the heat.
