Duck meat 600 gr Green bananas 5 fruits Minced shallots 1/2 tablespoon Minced garlic 1/2 tablespoon Sliced ginger 1/2 tablespoon Fresh chili 2 fruits (chopped) Color sauce 1 tablespoon Fish sauce 1 tablespoon Common spices a little (salt/ sugar/ pepper) Cooking oil 1 tablespoon Vinegar a little

How to cook Duck with green bananas

  • Prepare the ingredients

    The duck meat you buy needs to be thoroughly cleaned to ensure the deliciousness of the dish.

    To eliminate the smell of the duck meat, you should put the duck in a large bowl, use salt and white vinegar to scrub the body of the duck for about 10 minutes, then rinse it clean with cold water. After the duck meat has been cleaned and the smell removed, cut it into bite-sized pieces, rinse it again with cold water, and let it drain, then place it in a large bowl.

    Peel the green bananas and cut them into pieces about the length of one finger, then split them into 4 and soak them in diluted saltwater to prevent browning.

    Cut the roots off the green onions, discard any wilted leaves, wash them clean, then cut them into pieces about 2 finger lengths long.

  • Marinate the duck meat

    Marinate the duck meat with 1/2 tablespoon of salt, 1 tablespoon of fish sauce, and 1/3 tablespoon of pepper. Use chopsticks to stir well so that the spices blend together and soak into the meat evenly. Marinate the meat for at least 30 minutes.

    Heat a pan on the stove with 1 tablespoon of cooking oil, when the oil is hot, add minced garlic and chopped ginger to sauté.

    When the garlic and ginger turn golden and fragrant, add the marinated duck meat and stir quickly until the meat is sealed, then add chopped fresh chili.

    Pour in enough water to just cover the meat, use chopsticks to gently stir and mix the seasoning into the water. Bring to a boil over high heat, then add 1 tablespoon of coloring sauce to the pot, stir well to dissolve the color and reduce the heat, cover and braise the meat for 10 minutes.

    After 10 minutes, uncover, add 1 tablespoon of sugar to the braised meat, stir well, and add the green bananas, mixing for the seasoning to absorb. Continue to braise, covered, for another 15 minutes, until the water reduces and the meat and bananas have absorbed the seasoning and are evenly colored. Taste again for seasoning, then add the chopped green onions and stir for another minute before turning off the heat.

    Your dish is now ready to be plated and enjoyed!

How to cook Ginger Braised Duck

  • Prepare the ingredients

    To make the dish flavorful, the duck meat needs to be thoroughly cleaned and odor removed before cooking. After purchasing the duck, place it in a large basin, rub salt and white vinegar over the duck for about 10 minutes, then rinse thoroughly with cold water.

    After the duck has been cleaned and rinsed, cut it into bite-sized pieces, wash it again with cold water, and let it drain, then place it in a large bowl.

    Peel the ginger, remove the eyes, wash it clean, then slice it, and finally crush it.

    Crush the lemongrass and cut it into sections. Peel the garlic, wash it clean, and then mince it.

    Once you see the meat has firmed up, add water just enough to cover the meat, use chopsticks to stir well, then continue to cook until the water boils vigorously, then reduce the heat, cover the pot, and stew for another 10 minutes.

    After 10 minutes, uncover the pot and you will see that the water has reduced; adjust the seasoning to taste, crush 3 fresh chilies and add them to the pot, increase the heat to bring the stew back to a boil. Turn off the heat and serve the meat to enjoy.

How to choose fresh and delicious duck meat

  • You should choose ducks that have just been slaughtered, with light yellow skin that is not torn or scratched.
  • When you press the meat with your hand, it should feel firm and elastic.
  • You should not choose ducks that deform when pressed, lacking elasticity, as they may have been injected with water.
  • Ducks with overly dark skin, blotchy areas, sliminess, or many bruises are old and not fresh.

How to clean duck meat without odor

  • Method 1: Use coarse salt to rub all over the duck, then rinse with water. After that, use a mixture of rice wine and sliced ginger, crush and rub the entire duck again, rinse with water, and let it drain.
