How to cook Kho quẹt eggs

  • Chop green onions

    After cutting off the roots and any damaged leaves, wash the green onions, then use a knife to chop finely.

  • Making dipping sauce

    Add 2 teaspoons of fish sauce, 2 teaspoons of sugar, 1/2 teaspoon of monosodium glutamate into a bowl and stir until the sugar and monosodium glutamate are completely dissolved.

  • Frying eggs

    Place a non-stick pan on the induction cooker and add 2 tablespoons of cooking oil to the pan.

    Once the oil is hot, crack the eggs into the pan one at a time. When the eggs are cooked evenly on both sides, use a ladle to remove them to a plate.

How to choose fresh and delicious pork fat

  • Good pork fat will have a cloudy white color, good elasticity, and especially no signs of being slimy or turning yellow, and no unusual fishy smell.
  • To make delicious crispy pork fat, you should choose the pork neck fat because when fried, it will turn golden and crispy, and the fat will be richer and more fragrant.
  • To ensure quality and safety, you should buy pork fat at reputable stores, food counters, supermarkets, or major markets that have a quality inspection mark.

  • Boil the eggs

    After purchasing the eggs, wash them clean, then place them in a pot with a little salt, and pour in enough water to cover the eggs.

    Next, boil the eggs for about 10 minutes. Once the eggs are cooked, use a ladle to scoop the eggs into a bowl of water for about 5 minutes to let the eggs cool down.

    Then, peel the eggs and use a knife to cut the eggs in half.

  • Prepare the fat

    For the fat, place it into a bowl with 1 tablespoon of coarse salt and 2 tablespoons of vinegar, then mix well. Once the fat turns white, rinse it with clean water.

    Next, use a knife to cut the fat into bite-sized pieces, then place them into the bowl.

    After that, marinate the fat with 1/2 tablespoon of salt and 1 tablespoon of seasoning, mix well, and let it sit for 15 minutes.

    Heat a non-stick pan on the stove. Once the pan is hot, add the fat and stir-fry over medium heat.

    You place a pot on the stove, add 3 tablespoons of cooking oil (oil from the fried pork skin) into the pot. When the oil is hot, add minced onion and garlic and sauté until golden.

    Then, add 3 ladles of water into the pot, followed by 1 tablespoon of seasoning, 2 tablespoons of sugar, and continue to cook over high heat. When the water boils, add 1/2 tablespoon of chili sauce.

    Next, you can adjust the seasoning to your taste, then add the boiled eggs. Use a spoon to pour the sauce over the eggs to let them absorb the flavors.

    Finally, add the fried pork skin, whole chili, and a little green pepper. Before turning off the heat, drizzle an additional 1/2 ladle of cooking oil (oil from the fried pork skin) to enhance the richness of the dish.

  • Based on the eggshell: When buying, you should carefully observe the eggshell. Fresh chicken eggs will have a dark brown shell, evenly colored, especially without cracks or black spots. For local chickens, the color will be lighter. Avoid buying if you see the shell is pale and has many black spots because that indicates the eggs have been stored for a long time.
