Anchovies 200 gr Green onions 3 stalks Chili peppers 5 pieces Shallots 1 bulb Garlic 4 cloves Fish sauce 5.5 tablespoons Rendered fat 4 tablespoons Common spices a little (salt/ sugar/ seasoning/ monosodium glutamate/ pepper)

How to cook Braised Anchovies

  • Prepare and marinate the anchovies

    To eliminate the fishy smell of anchovies, wash the fish with diluted salt water, then rinse with clean water and drain.

    Next, marinate the anchovies with a mixture of seasonings including: 1/3 spoon of salt, 1/3 spoon of monosodium glutamate, 1/3 spoon of sugar, 1/3 spoon of seasoning powder, 1/3 spoon of pepper, and 1/2 spoon of fish sauce.

    Then stir well and marinate for about 15 – 20 minutes for the anchovies to absorb the seasonings.

  • Prepare other ingredients

    Green onions, remove the roots, wash clean and chop finely. Wash the chili and mince it. Peel the garlic and shallots, wash them clean, then crush and mince them.

  • Stew the anchovies

    Put into a pan heated on the stove 2 tablespoons of rendered pork fat, add minced shallots and garlic and fry fragrant over medium heat until the mixture is golden, then add 5 tablespoons of water, 5 tablespoons of fish sauce, and 5 tablespoons of sugar, stirring well to dissolve the seasonings.

    When the mixture boils and turns a beautiful golden color, add 1 teaspoon of pepper and stir gently, then add the anchovies and stew on low heat for 15 – 20 minutes to allow the anchovies to cook slowly and absorb the seasoning evenly.

    Stew until the mixture thickens, then add chopped green onions and chili, and turn off the heat.
