Prepare the catfish
You buy pre-prepared catfish at the market, then scrape off the slimy part on the catfish’s head. Next, remove the two blood clots on both sides of the fish gills (if any), scrub clean with coarse salt and rinse with water. Drain and cut into bite-sized pieces.

Prepare the Catfish

Wash the green onions and chop them finely. Peel the garlic and shallots, then mince them.

Place the slits of the catfish in a bowl (or large plate), and gradually add the spices: 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 tablespoon of granulated sugar, 2 tablespoons of fish sauce, 2 tablespoons of color sauce, and mix well to absorb the spices for 15 – 20 minutes.

Make the fermented soy sauce
Place a shallow pan on the stove over medium heat, add about 1 tablespoon of cooking oil to sauté half of the chopped shallots and garlic until fragrant. Then, add 1 cup of minced lemongrass, stir for about 2 minutes, then pour in 1 can of fermented soybeans, and stir-fry for 3 minutes.
Next, add about 1 bowl of water along with the spices: 1/2 teaspoon of monosodium glutamate and 1 tablespoon of sugar, and stir the mixture until it boils. Turn off the heat.

Place a pan (or pot) on the stove over medium heat, and continue to sauté with the remaining minced garlic and shallots. Then, add the marinated catfish and stir-fry until the fish is firm.
