How to cook Braised Catfish with Pepper

  • Prepare the catfish

    You buy pre-prepared catfish at the market, then scrape off the slimy part on the catfish’s head. Next, remove the two blood clots on both sides of the fish gills (if any), scrub clean with coarse salt and rinse with water. Drain and cut into bite-sized pieces.

  • Marinate the catfish with spices

    Put the catfish (that has been cut) into a clay pot, then gradually add: 2 tablespoons of coloring sauce, 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1/2 tablespoon of sugar, and 3 tablespoons of fish sauce, mix well and marinate for about 20 minutes.

    Place the pot of catfish on the stove over medium heat, stir well until the fish meat is firm, then add 2 cups of coconut water. At this point, reduce the heat and cook until the water thickens, then add 1/2 teaspoon of pepper, and stir well. Turn off the heat.

How to Prepare Braised Catfish with Fermented Soybeans

  • Prepare the Catfish

    Buy pre-prepared catfish at the market, you just need to blanch it briefly in boiling water and scrape off the slime. Then, wash it with salt and clean water, drain, and cut into bite-sized pieces.

    Wash the green onions and chop them finely. Peel the garlic and shallots, then mince them.

  • Marinate the fish with spices

    Place the slits of the catfish in a bowl (or large plate), and gradually add the spices: 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 tablespoon of granulated sugar, 2 tablespoons of fish sauce, 2 tablespoons of color sauce, and mix well to absorb the spices for 15 – 20 minutes.

  • Make the fermented soy sauce

    Place a shallow pan on the stove over medium heat, add about 1 tablespoon of cooking oil to sauté half of the chopped shallots and garlic until fragrant. Then, add 1 cup of minced lemongrass, stir for about 2 minutes, then pour in 1 can of fermented soybeans, and stir-fry for 3 minutes.

    Next, add about 1 bowl of water along with the spices: 1/2 teaspoon of monosodium glutamate and 1 tablespoon of sugar, and stir the mixture until it boils. Turn off the heat.

  • Braised Fish

    Place a pan (or pot) on the stove over medium heat, and continue to sauté with the remaining minced garlic and shallots. Then, add the marinated catfish and stir-fry until the fish is firm.

    Pour all the prepared soy sauce (made in the previous step) into the pan along with whole chilies. Braise the fish for about 7 minutes, then add the green onions. Turn off the heat.

    Catfish braised in soy sauce has a rich, fatty flavor from the soy sauce, a sweet and salty taste from the braising liquid, along with the tender catfish flesh that is very easy to eat. This dish is appealing to both the elderly and young children in your family!

How to choose fresh and delicious catfish

  • You should choose catfish weighing about 1kg because it has just the right amount of meat, not too much and not too little. Additionally, you should choose fish that are still alive, with bright eyes, where you can see the pupil inside.
  • The belly of the fish is normal, not swollen. The scales are still tightly attached to the body, and there is no slimy substance with an unpleasant smell.

How to clean catfish to remove slime and odor

  • Method 1: Use kitchen ash to rub the fish’s body and stroke it along to remove the slime, then rinse with clean water.
  • Method 2: Use salt and lemon juice (or vinegar) to rub the fish’s body, pour hot water over it and scrape off the slime, then wash clean with rice water.
  • Method 3: Use ginger and vinegar (or lemon) to rub on the fish’s body, then rinse with clean water.
