How to make Eggplant Lentil Salad

Cook lentils
After purchasing, rinse the lentils briefly with water to remove any dirt.
Place a pot on the stove, and gradually add the rinsed lentils along with 240ml of chicken broth, 360ml of water, 1 clove of garlic, 10g of lemon peel, 3g of dried bay leaves, 1.5 teaspoons of dried thyme, and 20g of celery.
Turn on the heat and cook over medium heat until the water boils, then reduce the heat to low, cover, and simmer for about 20 minutes until the lentils are soft.
Tip: Boiling lentils with chicken broth and various herbs will make the lentils more fragrant and flavorful.
Next, remove the lentils using a strainer, discard the broth and the herbs such as thyme, celery, garlic, lemon peel, and bay leaves, and let the lentils drain thoroughly.

Make salad dressing
To make the salad dressing, you add sequentially into a jar 2 tablespoons of lemon juice, 4 tablespoons of olive oil, 1 teaspoon of mustard, 1 minced garlic clove, 1 teaspoon of thyme, 1 teaspoon of sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper.
Then close the jar and shake well until all the ingredients are completely dissolved and blended together.
Tip: If you don’t have a glass jar, you can use a spoon and stir the dressing mixture until all the ingredients are completely dissolved.

Prepare and roast the eggplant
Wash the eggplant thoroughly with cold water, then drain and cut into bite-sized pieces, about 3cm thick.
Marinate the eggplant with 3 tablespoons of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper. Mix well and let the eggplant soak in the seasoning for about 10 minutes.
Preheat the oven to 240 degrees Celsius for 15 minutes.

How to make Eggplant and Bell Pepper Salad

Prepare the vegetables
Soak the eggplant and bell peppers in diluted salt water for about 15 minutes, then rinse well with cold water and drain.
Cut the eggplant into small pieces, about 2 – 3cm thick.
Slice the bell peppers to match the size of the eggplant.
Peel and slice the red onion thinly. Crush the garlic and chop it finely.

Place a pan on the stove, add 5 tablespoons of olive oil and wait for it to heat up.
Once the oil is hot, add all of the eggplant and sauté over medium heat for about 5 – 6 minutes until the eggplant is golden and slightly charred, then turn off the heat. Next, add 1/4 teaspoon of salt and mix well before transferring to a bowl.

Wipe the pan clean with a paper towel, then add 2 tablespoons of olive oil and heat it up. Add the chopped shallots and minced garlic to the pan and sauté for about 2 minutes until fragrant.
When the shallots and garlic are aromatic, add green and red bell peppers and sauté over medium heat for about 2 minutes until the peppers are cooked. Next, add 1/4 teaspoon of salt, 1/4 teaspoon of ground pepper, and 1/2 teaspoon of crushed dill to the pan, stir well for another minute, then turn off the heat and transfer to a bowl to cool.
