  • Prepare the eggplant

    First, prepare a bowl of clean water and add 1 teaspoon of salt, stirring until the salt is completely dissolved.

    Then wash the eggplants, cut off the stems, and use a knife to slice the eggplants into round slices of a suitable thickness. Next, place the eggplants in the diluted saltwater bowl to soak for about 5 – 10 minutes to prevent browning, then take the eggplants out and place them in a basket to drain.

  • Prepare other ingredients

    You take 1 chicken egg, crack it into a bowl, then add a mixture of spices including: 1/3 teaspoon of salt, 1/3 teaspoon of ground pepper, 1/3 teaspoon of seasoning powder, 1/3 teaspoon of sugar, and use chopsticks to mix well for better flavor.

    Next, add the chopped green onion into the batter mixture and mix well.

    Finally, add all the eggplant into the batter bowl, and use a spoon to mix until the batter evenly coats the eggplant.

    Place a pan on the stove, turn the heat to medium, and add 400ml of cooking oil, heating until the oil is hot.

    Once the oil is hot, add the battered eggplant and fry on low heat, turning the eggplant frequently until it is golden brown on both sides, then remove to a plate lined with paper towels to absorb the oil.
