How to prepare Steamed Tilapia with Soy Sauce

  • Prepare the tilapia

    Clean the tilapia by removing the scales, belly, and slime. Then, use a knife to make diagonal cuts on both sides of the fish to help the seasoning penetrate quickly and the fish cook faster.

    Wash the dill and green onions, then cut them into pieces about 1 finger length.

    Smash and mince the ginger. Wash and chop the chili.

    Wash the lemongrass, take the root part, smash it, and finely chop it.

  • Add seasoning to the fish

    After preparing the tilapia, marinate it with a mixture of spices: minced ginger, chopped dill, chopped chili, and minced ginger.

    Rub the spices all over the fish, then add 2 teaspoons of ground pepper, 5 tablespoons of soy sauce, and 2 tablespoons of fish sauce, and continue to rub until the spices are evenly distributed on the fish.

    Stuff the chopped dill and green onions into the fish’s belly while rubbing the spices.

    Do the same with the rest of the fish. Marinate everything for 15 – 20 minutes.

  • Prepare the tilapia

    Clean the tilapia by removing the scales, belly, and slime. Then, use a knife to make cuts on both sides of the fish to help the seasoning absorb quickly and the fish cook faster.

    Dill should be washed clean and cut into pieces about the length of a finger.

    Ginger should be smashed and minced. Chili should be washed clean and chopped small. Shallot should be chopped small.

    Lemongrass should be washed clean, take the root part, smash it, and chop small. Keep the remaining part of the lemongrass to steam the fish.

    Galangal should be washed clean and minced.

    Marinate the fish with the prepared ingredients including: minced lemongrass keeping the upper part, chopped chili, minced galangal, finely chopped shallots, 1 piece of tamarind split in half, minced ginger, and finely chopped dill.

    Then, add 100ml of beer and mix all the spices well and rub them into the fish for quicker absorption. Marinate the fish for about 15 minutes.

How to choose fresh and delicious tilapia

  • You should choose male tilapia with a round body, weighing about 1.5kg – 2kg, as it will have more meat, firm and fatty flesh, suitable for steaming.
  • If you are going to braise the fish, you may consider buying female fish, which have a big belly containing a lot of eggs and will be fatter.
  • The gills of the fish should be bright red and not bruised. If the fish has no unpleasant smell, it is good tilapia.

How to clean tilapia properly, without a fishy smell

  • Step 1: Wash the tilapia thoroughly 2 – 3 times with clean water.
  • Step 2: Clean the inside of the fish’s belly, remove the gills, and thoroughly clean the bile and intestines.
  • Step 3: Use a knife to cut off the fins and scrape off the scales of the fish.
  • Step 4: Use a little salt (or lemon) to rub the body and belly of the fish clean.
  • Step 5: Soak the fish in saltwater (you can add some vinegar or a little alcohol).
  • Step 6: Rinse the fish 2 – 3 times and then let it drain.
