  • Prepare the ingredients

    After cleaning the belly and scales of the mackerel, to eliminate the fishy smell and slime, soak the fish in a mixture of diluted lemon juice for about 5 minutes, then remove, rinse with cold water, and let it drain.

    Wash the tomatoes thoroughly. Then, dice them.

    Remove the stems from the chili peppers, wash them clean with water, and chop them finely. Wash the coriander and chop it finely.

    • Method 1: To remove the slime and help eliminate the fishy smell, heat some water until slightly hot, then pour it over the fish and use a knife to scrape off the scales along the back and tail.
    • Method 2: Use a knife to scrape off the black membrane inside the fish’s belly to prevent bitterness and fishiness. Then, soak the fish in diluted saltwater or rice water for about 15 minutes or rub salt on the fish, then rinse with clean water.

  • Marinate and fry the fish

    You take the fish out to a plate, marinate with 1 teaspoon of seasoning, sprinkle on both sides for the fish to absorb the spices and marinate for 10 minutes.

    Turn on the stove, wait for the oil to heat up, then add the diced tomatoes, seasoning with 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 tablespoon of sugar, 1/2 teaspoon of pepper, and 1 chopped chili.

    Stir well to combine the tomatoes and spices, cook for about 5 minutes until the sauce thickens and the tomatoes are slightly soft and broken down.
