Pork ribs 500 gr Shallots 3 bulbs Garlic 5 cloves Green onions 3 stalks Honey 5 tablespoons MSG 1/2 tablespoon Pepper 1/2 tablespoon Chili powder 1/2 tablespoon Oyster sauce 1 tablespoon Fish sauce 2 tablespoons Cornstarch 1 tablespoon

    Chop the shallots, green onions, and garlic.

    Clean the ribs by rubbing them with salt and then rinsing them with water, use a knife to cut the ribs into individual pieces, chopping them into bite-sized sections.

    Blanch the ribs in boiling water for about 1 minute to firm up the meat, then remove and rinse with cold water, and let them drain.

  • Marinate the ribs

    Add to the ribs successively 1/2 tablespoon of minced shallots, 1/2 tablespoon of minced scallions, 1/2 tablespoon of garlic, 1 teaspoon of MSG, 1 teaspoon of chili powder, 1 teaspoon of pepper, 1 tablespoon of fish sauce, and 1/2 tablespoon of honey. Then mix well to ensure the rib meat absorbs all the spices. Marinate for about 30 minutes.

    In a bowl, combine the remaining fish sauce, MSG, chili powder, pepper, and honey along with 1 tablespoon of oyster sauce, stirring well to dissolve the mixture.

    Tip: You can add annatto oil to make the dish more visually appealing!

    Add 20ml of water to the tapioca flour and mix well until dissolved.

    Tip: You can substitute tapioca flour with cornstarch as well.

    At this point, put the marinated ribs into the hot oil pan and fry over medium heat until golden brown, then take them out and let them drain.

    Tip:

    • You can use chopsticks to touch the bottom of the pan; if you see bubbles rising, the oil is hot enough to add the ribs.
    • If you are afraid of oil splattering, you can add a little salt or 1-2 chili peppers to the oil pan.
    • You should frequently turn the ribs to ensure they cook evenly.

    Continue to add chopped onion and garlic to the pan to sauté until golden, then add the previously prepared sauce, stirring well over low heat. After that, add the ribs and stir for about 5 minutes, seasoning to taste, and turn off the heat.

    Add the bowl of cornstarch that you just mixed, and stir well.

  • When frying, ensure the ribs are lightly golden (you can use a spoon to gently poke inside, if the meat is no longer red and just cooked, it’s good) to make the ribs more tender and delicious.
